As a pure vegetarian I couldn't understand half of it 😂 but still loved this poadcast 😊

Totally have to agree with Kautuk on his statement about picking a favourite restaurant based not only on the quality of the food but also with respect to the quality of the memories one makes there. There's this tiny momos joint at kochi, called shifus. The momos are pretty decent and they don't even have a bench, but people swarm in because of it's location (by a joggers park, not quite far from my school). Would pick that place over any other anyday just for the love of the memories we created there. And it's been so long since we've graduated, but even today, even if i go there alone, one bite of the food, and i couldn't stop smiling; those momos don't just fill my tummy, they also fill my heart.

I think Neville has a selection bias when it comes to international cuisine. Like sure we sometimes cook our food a lot more or just in a different way but that's how a cuisine evolves. There is a very popular dish in the UK called "bangers and mash". It's called that because during the Second World War, they didn't have very good storage and so a lot of meat would be in direct contact with actual live ammunition and so when they fried it (sausages/frankfurter), it would make little noises and bangs, hence the name. Same with a thing called jellied eel from a time in the UK when the Thames was so dirty that the only thing that survived in the river were sewage eels and they had to be extremely careful and literally boil it as much as possible and then put it in a disgusting coagulated broth. Kautuk was right when he said "They don't know how to make vegetables like we do" because essentially that's what Neville is expecting from Indian Cuisine. Big fan of the podcast and love your guys' work :).
