My thought was swap 0% and 100% so to go forwards you need to be completely on the brake and to slow down you have to let off the brake etc

With inverted steering, grab the bottom of the wheel and treat your left-right motion as if you're holding the top. Its trippy af and very awkward but it might help XD This is total ROFL though and I love it :P

All you have to do is drive using the bottom of the steering wheel. We used this to learn how to back up boats, and its the same concept. You turn the bottom to the right while the top goes left, making you turn where you actually want to go in this context.
