✅ Ingredients: (glass size 200 ml)
3 eggs
pinch of salt
120g / 4.2oz sugar (2/3 cup)
90ml / 3fl oz vegetable oil (slightly less than 1/2 cup)
180g / 6.3oz cream cheese (5 tbsp)
200g / 7oz flour (1 cup + 1/4 cup)
10g / 0.35oz baking powder (2 tsp)
100g / 3.5oz dried apricots (about 15)
27x14cm (10x5in) baking dish
bake in the oven for 40 minutes at 170C (340F)
dust with icing sugar
