Hey everyone! You know we love the Char-Griller Gravity 980 on this channel for all of its versatility, but today we are going to talk about how to use it to cook old school low and slow BBQ. Previously you’ve probably heard me sing the praises of the Gravity 980 for mostly its hot and fast cooking as we’ve used it to do a lot of KCBS competition cooking, even winning 2nd place brisket at the Jack Daniel’s BBQ world championship. I had always thought that because of how much hot air moves through this gravity that it would be too much of an ask to get it to cook great low and slow BBQ without having to constantly spritz the meat. When I’m cooking low and slow, my ideal situation is to put the protein on before I go to bed, no muss no fuss, and wake up to it done or ready to wrap. These thoughts were all based on the idea of leaving the rear vent wide open so that we could move as much convective air and smoke through that chamber as possible, and till now that's how I always cooked on the Gravity 980. However, because the temp controller is intelligent, if we shut that down to say half or a little less then we will subsequently move less air through the chamber, keep a more gentle moist environment for our protein to smoke and have an ideal situation! This new way of cooking for me on the Gravity 980 just solidifies how fantastically versatile this cooker is. This is 100% true. Offset design favors a convective environment. The increased airflow creates a need to burn more fuel and therefore more hydration during the cook. Kamado grills favor a more radiant environment, similar to an indoor oven. The lower airflow is why kamado style cookers are so fuel efficient and keep your food hydrated better.

Couldn't agree more! Also, throw a piece of wire over the fan door latch so the fan door is only about an inch open. Demo spikes from wood chunks igniting or wind are a thing of the past. It still gets more tan enough air. Cheers to you sir!

1/2 closed is where my 980 sits perfectly for a cooks between 225-275 for Pork Butts or briskets. Only fluctuates about 10 degrees or so. Loaded with B&B Oak and Post oak Chunks in the hopper. 12-14 hours on a full hopper without reloading. Perfect about of smoke.

I have been closing the back vent about 75%, set the cooker for 205 and have been putting a brisket on at 2300 and wrapping at 0700 give or take. It has been putting out tremendous brisket that way.

My back vent is seldom open 50%; I usually run at 75% closed and even fully closed at times. The hottest I run mine is 350-375 for a hot and fast, but normally do overnights at 200 and run 225-275 for other cooks. I've said it before and I will say it again, this smoker makes brisket almost too easy.
