Funny you mentioned the guys that have been curing eggs for 40 years and smashing fish. That would be me. However that doesn’t mean I didn’t learn something valuable. Yes, I watched your whole video. I have my own cures for different seasons that work really well. However they are a pain in the butt often as there are so many steps. I went to a commercial cure and your, how to, taught me something valuable. The end step after curing the eggs, which I do the same to that point, of drying the eggs on the rack. I never did this and didn’t like the soggy left over cure in my jars. I 💯% will be doing this with my next batch from commercial cures. Great video and thank you.

If you don't have drying rack/ screen you can also dry them on sheets of paper towels but the rack dries better/quicker because it allows air to circulate on both sides of Eggs. Just be sure to use a several layers of paper towels and put cardboard, plastic tray, or something underneath to prevent the "juice" from soaking through and staining table/ bench.

I did use a video yall posted a few years ago with the procure stuff to make my eggs this year. I caught my first egg coho off it at the beginning of fall. Good info for sure! Will have to try this next!

Cam, have you ever used a vacuum sealer jar sealer attachment to get the air out of mason jar of eggs? You can use use one of those before freezing. Do you think getting the air out of jar makes a difference in protecting the eggs from freezer burn? Of course not draining/drying eggs before freezing also allowing the liquid to protect them from air/freezer burn. I have a Food Saver brand jar sealer attachment but I'm sure other brands make them too.

Most likely for dry brining salmon before smoking it. The dry brine mixture is usually about 4:1 ratio of brown sugar to salt so you end up using a lot of sugar.

Let's say you're not a guy who has several pounds of eggs, and you want to try to have a few different cures, but you don't have the full quart jar - just a couple of skeins of each. What is the general consensus on vacuum sealing your eggs for longer term storage? Is it always better to throw some borax on top to "cut off air circulation" (I realize air gets between the granules of borax) as some people say? You mentioned that you like the wetter egg to air seal longer term storage eggs, but do you ever add something like Pautzke's bait nectar (I know you guys are Pro-Cure guys, but they don't have a competing product) to a dryer egg to bolster that, and/or do you find that mixing cure/scent products homogenizes your final products? Do you find that a very light application or a very heavy application of the same egg cure can change the result of whether fish will hard commit to an egg (excluding the chance that the heavy application is so much that it's "burning" or ruining your final product)? How often do you add extra sugar or salt or something else generic beside dye to a base cure - ie dehydrated flesh? Again, I know you guys are loyal to your sponsors, but do you have an old reliable stand by like a river cured, or something old school like Jello and borax, that you keep in your back pocket? Last question, I swear: Did you just go get some borax, throw it on your eggs, and show up to the river and they worked instantly? Or did you have to dial it in, and if so, what was that process like -- did it take years to figure out your bait game?
