HEALTHY TIRAMISU
Today I'm going to show you how to make healthy tiramisu.
This easy healthy tiramisu is made without eggs, sugar and mascarpone cheese.
It's a low calorie tiramisu you can enjoy without feeling guilty - it's also high in protein.

HEALTHY TIRAMISU RECIPE
(makes 4 servings)
Ingredients:
Oatmeal base:
1 cup ground oats or oat flour (100g)
2 tbsp tapioca or cornstarch
1 tsp baking powder
1/3 cup milk (80ml)
2 tbsp maple syrup
2 tbsp applesauce
1 tsp vanilla extract
Coffee:
1/2 cup hot water (120ml)
1 tsp instant coffee powder
1 tsp maple syrup
1 tsp rum
Cream:
1.5 cups ricotta cheese (400g)
3 tbsp honey or maple syrup
1-2 tsp vanilla extract
1/2 cup heavy cream (120ml)
Cocoa powder for dusting the Tiramisu
NUTRITIONAL INFO (per serving):
337 calories, fat 9.9g, carb 46.4g, protein 15.1g
Preparation:
For oatmeal base, in a bowl, add the ground oats, cornstarch, baking powder, milk, maple syrup, applesauce and vanilla extract. Mix it up, pour in a glass container and microwave for 2 minutes at high.
Let it cool a bit, than transfer to a cutting board and cut into chunks, transfer to your tiramisu bowl.
Make a coffee by combining hot boiling water, instant coffee powder, maple syrup and rum.
Spoon the coffee over and around the cake pieces.
For cream, in a bowl add the ricotta cheese, honey and vanilla extract, and beat well using an electric mixer.
Add the whipped heavy cream and gently fold in.
Pour the cream over the soaked cake base and smooth evenly with a spatula.
Place in the fridge to chill for a few hours.
Generously dust with cocoa powder on top and it's ready to dig in.
Serve and enjoy!

Hi! i made it yesterday, I modified it a bit, because the guest i was expecting cant have any coffee. So i made the base exactly like you showed, but baked it in the oven 20' 200*C in not preheated oven. After I cut and placed it in the bowl, i poured over some cacao powder mixed with milk instead of coffee.Then i mixed 400g of non fat skyr and 250g of mascarpone with 3 tbsp of ksylitol, put it on top and finished it with strawberries peach and mint. i let it sit in the fridge for about an hour. it is soo good! and the mascarpone-skyr is so thick you can easily take it out of the bowl. thank you!

Such a great recipe and thank you Sasha for always innovating and creating with healthier options. Of course, those with milk allergies (lactose or casein 1) will not be able to eat huge amounts but even a tiny spoonful of this would be soooo satisfying! 👍

Wow Sasha it just looks fabulous and has that wow factor that amazes you right away But i think we should add a bit of salt to the base and the cream so as to explode the flavour of the recipe but surely im trying it out and will tell u the result

Thanks Johanna! Well, for applesauce you can use melted butter, and for ricotta and heavy cream, there's couple of options, depends what you need and like, Greek yogurt, cottage cheese, silken tofu or coconut cream, just to name a few.

Yay, looks like you finally solved my problem of finding a healthy substitute for ladyfinger biscuits! But for sponge-cake oatmeal base, what would be the temperature and time for oven-baking? I'd like to try this but don't have a microwave.

I agree, sponge-cake base is a nice solution, and you can bake yours at 350 for 15-20 mins, anyway it should be dried out.

That would be great! I prefer using ricotta mostly because of its mild flavor, so it doesn't overpower the other ingredients, what happens with Greek yogurt, it is delicious, I actually tried this Tiramisu with Greek yogurt, it just fine, but I love it more with ricotta. Talking about nutrition either ricotta, cottage cheese or Greek yogurt are better option compared to mascarpone or cream cheese.

Ricotta has definitely become your new stable ingedrient next to the oats 😆 Looks delicious, but still can't find Ricotta in Japan (and very expensive). Tiramisu is usually made with whipped cream anyways here 🙃 Want to try with Cottage Cheese some time. Might work as well.

You're right, I'm not just crazy about oats, I've been doing a lot of experiments with ricotta cheese, and I love it. Cottage cheese or Greek yogurt will work too, I gave it a try with Greek yogurt, also was good, but not that light in flavor like ricotta.

@@summerrose1545 Most recipes of Sasha that include Ricotta can probably be substituted with Cottage Cheese or Greek Yogurt, the first one has a similar texture to Ricotta but the latter one is a little runnier so the outcome will probably be a little different. I'd say just try it out and see if it works! There was another recipe of Sashas that uses egg whites and I didn't have any eggs so I substituted Aquafaba that I had left over in the fridge and it worked perfectly. Just try :) Glad my question could be of help tho! I always remind Sasha of my being in Japan where some ingredients are hard to come by so I hope he doesn't start become all too fancy with new ingredients like some healthy food youtubers do.😄

I like it, but Instead of using heavy cream you can use eggs, beat the white and make them flufy and thick, then beat the yolk with the ricotta, this will make a lighter and even healthier version of it.

From what I see in the video, if it whips well and retains the air, it'll work just fine to get that fluffy texture.

Delicious once again :) I know the oat base is healthy but it is more like a cheesecake base Is there anyway to make this more like a sponge base? or do you have a secret recipe for oat lady fingers?

Hi there, glad you like the concept, but yes there's more room to improve it, so healthier oat lady fingers would be the best way to do that, unfortunately still haven't came up with a recipe that makes me happy.

Yes, but it will influence the taste a bit, anyway still delicious, I prefer ricotta because it's mild in flavor and neutral.

Hi Sasha, I just tried your recipe. The sponge cake came out a little tough. I'm not sure what I did wrong, I followed the exact recipe. Btw, I used oat that I ground instead of store-bought oat. Could that be the reason?

Hi there! Using ground oats is just fine, try to bake it for less time, but anyway it is not super soft like when using lady fingers, you can also try to soak it more by increasing the amount of coffee.
