Thanks for the video. This is the best one of have seen so far explaining dashes and ellipses. Do you have a video on beats? They seem to appear in dialogue, action and seems to mean different things depending how it is used? You could say from micro to macro in a script.

It's definitely acceptable. It's probably not technically correct, but you see it used enough that no one is likely to get hung up on it. It has the potential to very briefly confuse the reader by making them think you are cutting off a line of dialogue when you aren't, but ellipses have that same issue because they can make the dialogue look like it trails off when it doesn't. You might even argue that the information between the pieces of dialogue is functioning as a parenthetical phrase, in which case a double dash would be appropriate.
