I have another idea for you. Homemade Nutella. Hazelnut roasted and shreded till it is a cream or mousse. Than add honey and cocoa and a tablespoon water for consistency.

@@sooyaaaaaa_ Yes, of course you can use honey, just use a little less than you would with maple syrup, around 25% less as it's sweeter. Use a honey you like the taste of, I like manuka honey; although it does have a strong flavour/taste to it 👍

About two weeks ago I made a peanut butter jar's worth of preserves and it turned out very nicely. I used mixed berries currently in my freezer: blackberries, strawberries and blueberries, adding in unsweetened store bought applesauce, chia seeds and a spoonful of low sugar powdered pectin. I didn't make a mental note about additional sweetening but will be using a couple of tablespoons of monkfruit sweetener for the next batch....I have lots of berries to still use up ! This fruit mixture is so good with yogurt, over ice cream, in smoothies. Very versatile and not sickly sweet either.

Fantastic version of homemade healthy jam. Never ate store bought jam as it taste like a bag of sugar. I normally make my jams without pectin only add quarter cup of honey. I do boil the jars before and after cooking and adding jam to the jar as I like to use the berries growing in my yard. For a fast and easy jam for everyday, I love the chia seed recipe.

I like the idea to reduce the sugar which is nice! Although pectin occurs naturally in several fruits, esp citrus. When I make homemade jam I also get a lemon or two. I add the lemon juice in cause it adds a nice acid to balance things out. Then I also add the squeezed out lemon rind, peel, seeds n all in (you can put it in a filter bag) and cook it in there with the fruit. You can use that as your source of pectin. Then just remove it afterwards :)! Additionally if you make citrus marmalade no added pectin is needed !

I’ve been selling low sugar marmelade since the pandemic started and I cannot go back! Looking forward to see your input on that

How do you mean you've been selling marmelade, do you produce and distribute it on your own?
@eiramu

@@HowToCookSmarter yes. I live in a small fishing village in southern Africa and during the pandemic every crafts person started to produce their own things to make some living. Some started selling artisinal bread, some ice cream, and me marmelades and pickled or marinated goods :D

@@eiramu That's great, a lot of people did the same thing here, started to grow their own food and produce homemade goods, and it's quite on demand here. What about your jams, is there any specific fruit you prefer to use, I guess you have some other sorts of fruit compared to what grows here in Europe?

@@HowToCookSmarter I've realized that the support nowadays for artisinal goods is higher which is great! I myself lived in Germany so I go back and see the change! In my case, I honestly started with jams because we had so many maracujas going bad in the garden and I was experimenting with sugar levels etc, even made some fruity hot sauces to use the chilies from the garden. Since we have so many tropical fruits here I stick to the local fruits such as mango, banana, oranges, lemons, and some of the more exotic region specific fruits. It's been a lot of fun! But I still prepfer the fermentation process more. I find it very sweet that you ask. I am a huge fan of your channel and have recreated a lot of your recipes already! 🥰

@@eiramu This is so great, making healthier food at home is definitely a fun, and I can see your passion about it, so I wish you keep going with this project, keep improving your products, you can take that knowledge with you no matter where do you live. Homemade maracuja jam, I would love to give it a taste for sure. Take care and thanks for supporting the channel, I'm glad you find my recipes helpful.

My go to daily is to place blueberries & a strawberry sliced up on my 2 slices of bread to toast (sometimes with 1/4 banana on each slice) and I toast in the toaster oven. When done, just mash the fruit into the toast. No extra sugar or my time of any sort is needed!

Another excellent video by our favorite RU-vid ⭐chef. Is it possible to substitute frozen fruit for fresh? Or would the water content be too much? Thank you, Sasha! You deserve all the praise, as your recipes never disappoint. 💖

Thanks so much Lauren, your kind words of support always put smile on my face:) Sure, I think frozen fruit would be just fine, you can add some extra chia seeds or oat slurry anytime...

I think the extra moisture from frozen fruits will evaporate while cooking.

You could add lime or lemon juice to the jam as a preservative to this chia seed fruit jam recipe…..it will last up to a month in refrigerator, as I wont go through the size you make in one week
