The ONLY Steamed Snow Crab with Garlic Vermicelli (蒜蓉粉絲蒸蟹腿) Recipe You Need

【Ingredients】
4-6 snow crab / king crab legs, sectioned
3 scallions, finely chopped
2-4 wraps of dried vermicelli, soaked
2 tbsp neutral oil (for scallion oil, preheated to 170°C / 340°F)
1 tbsp soy sauce
[ Minced Garlic Topping ]
100 g garlic cloves, minced
1 tbsp neutral oil
10 g butter
½ tsp salt
½ tsp sugar
1 tbsp oyster sauce
Pinch of potato starch / corn starch
【Steps】
1. Section the snow crab legs into 6 inch sections. Remove the upper part of the shells.
2. Soak the vermicelli in hot water until soften.
3. Mince the garlic and scallions separately.
4. Preheat the pot well over low heat. Add 1 tbsp oil and immediately pour in half of the minced garlic into the pot.
5. Fry until the garlic golden, and stir in 10 g butter. Cook until the butter fully melts before turning off the heat.
6. Add the remaining half of minced garlic, ½ tsp salt, ½ tsp sugar, 1 tbsp oyster sauce, pinch of potato starch and mix well.
7. Drain the vermicelli, mix in 1 tbsp garlic sauce and 1 tbsp soy sauce. Cover the bottom of the plate with garlic vermicelli.
8. Preheat the steamer. Place the crab legs on top of the vermicelli. Add the garlic sauce to the crab meat immediately before transferring into the steamer. Steam in high heat for 8 minutes.
9. Heat 2 tbsp neutral oil to 170°C / 340°F and pour over the chopped scallions before serving.
