This is a rehash of one of our more popular videos - where we lay out our thought on the perfect moccamaster brew recipe.
But this time - 3 years later - we’ve learned a lot & picked up a few tools along the way. Now, we’re here, bringing it all back for a redemption video where we REALLY dialed in the recipe.

I like the idea of a better shower head for the Moccamaster, but I think heating up a larger mass of stainless steel will reduce your initial water temp. I am a fan of some durable plastic for this application, so it doesn’t rob as much heat from the brew water.

If the larger metal mass makes a difference, I'm sure that fanatical people will run a batch of plain water through, to pre-heat the metal.

Also would you comment on a hand grinder vs electric for drip/pour over? Altho you used a shimmy, wouldn't a good hand grinder produce less fines? Thank u

Luke Thank you for the video question for you I have the exact setup other than the Ode Brew Grinder Gen 2 stock burr and curious on the GRIND SETTING number? I was surprised how low you went with Ode Gen 1

Without knowing the condition of your equip, etc - I’d recommend starting somewhere in the center and dialing in according to your preference.

The shimmy thing seemed cool but immediately I thought "really?! One more 'thing' to spend MORE money on?! Why can't the damn grinder just grind in a fashion that does not produce ground coffee that is inferior and requires further manipulation...?"

Interesting. Is there a reason you used 1 liter of water instead of 1.25 liters. . . ? At a ratio of 60 grams of coffee to 1.0 liter of water, the amount of coffee increases to 75 grams for the 1.25 liter full pot. Are there concerns of overflow? Thanks.

@@mikesabran well, I think I do, but I am merly a coffee enthusiast. I wanted to get it try try out the flat burrs vs the Breville conical ones. I definitely enjoy the ode gen 2 and am please with my purchase but if it’s not in your budget to upgrade, the smart pro is still a great grinder.

Appreciate the tip on the shaker. A year since you posted, but I had’t seen it. Looks like they sell it directly, but those carrying their other gear don’t.

Just as an fyi: the water reservoir line that you refer to is 4 cups/16 oz/473 ml. You'll need to fill slightly above that line to reach 500 ml. I'm looking forward to your new stainless steel showerhead.

The recipe seems to be 'to the line' and the part that is in error is him saying '500mL', instead of 16 ounces (which is called 4 """cups""", by Technivorm).

It must be different for the brewers with the thermal carafe. The lines correspond to liters on mine (line 1 is 250ml, 2 is 500ml, etc).

A true German would make their own Shimmy, out of billet tool steel, to precise dimensions (ten thousandths, obviously). Nice try, though!

I see no downside to running a cycle with plain water... it will wet the filter and pre-heat the outlet arm. Aside from taking an extra 4 minutes...

Luke, Isn't half of the capacity of this machine 5, not 4 cups since the full line reads off 10 cups?

Perhaps, and it should be noted that 4 Technivorm """cups'"" is actually only 16 ounces, not 32 ounces as you would expect. Also, there's no line for 5 cups... but there are lines for 4 and 6 cups, etc.

Can you make a single cup of coffee? Or is it only 1/2 or full pot as the options to brew?

It's a bit confusing, but a """half pot""" is enough for one decent sized mug of coffee... equivalent to *16 ounces* of coffee (pint glass) or *a 'large' coffee at McDonald's.* For me that's about 1 serving (therefore the smallest amount I'm likely to brew). There are several lines marked on the reservoir -- the lines are marked '2,4,6,8,10' and you multiply those by 4, to get the equivalent volume in ounces: 2=8 ounces (only about half a mug of coffee, LOL) 4=16 ounces (~half pot, decent mug) 6=24 ounces (~half pot, extra large mug or travel mug, etc.) 8=32 ounces (two large McDonald's coffee cups) 10=40 ounces (full pot) As far as the settings on the brew basket, the model I have only has 'fully open, for a full pot', 'half way open for a half pot', and 'closed to prevent dripping or to bloom'. If you want to make a very small amount, I highly suspect you can use the brew basket from the Cup One model, which has a small hole to change brew timing for only one cup, and is designed to make 10 ounces of coffee. Or something like a standard plastic Melita pour over cone basket that uses #2 filters (haven't tried it yet, but it fits on the brew basket shelf on the Technivorm -- might need rubber bands to secure it).

I have been using the Select from December’23. Often it’s just the two of us. I transfer the beans into plastic centrifuge tubes ( mine ar graduated to 50 ml, but to avoid airspace I fill to the brim and knock it down to fill any gaps too) so it’s usually around 20 grams +/- 2 grams. I’ve found I get a strong enough brew I like to drink with milk ( I prefer with milk and sugar as my first cup) with 500 ml - the 4 cup mark. If I want to brew less, I use half a tube and pour to the 2 cup mark. Taste is individual preference, and what I find good for me may not be so for anther… but still I hope this helps

Gotta be honest...but when you stirred the grounds, the grounds already looked like they were being evenly saturated. I get the flaws with the brew head design not being a true shower head....but I can't imagine it makes that much of a difference unless you're making a large brew with a lot of grounds in the basket. Smaller brews seem to get evenly saturated just fine.

The only disappointment with the moccamaster is water dispersion. Agitating the grounds really does make a significant difference. I went as far as buying a second arm and using an ice pick to redirect the water ejection. It helps, but I'm looking forward to trying the prototype spray head.

The filter says to fold the edges and I notice you don't do this. Is there a reason?

Filters lay flatter if you fold them, and I’ve had a couple break on me when I didn’t fold them. But if wetting the paper makes it stick to the side and it doesn’t break, you should be fine

I'm not 100% sure, but I don't think any of the thermal carafe versions have the switch that slows down the brew process. I have a KBT model, and it doesn't have that switch.

Grind setting is not universal for all roasts and volumes brewed. Lesser amounts, as well as lighter roasts, need a finer grind. Additionally, sifting allows him to grind much finer than he ordinarily would. You likely would not want to go that fine, if you did not sift out all the super fine particles. If you ground that fine, and did not sift out all the super fine particles, like he says, in the video, you would experience harness and muddyness in the cup.

I don't off the unit because we use the pot after for about a hour. I thought that you could leave the coffee maker on because it keeps the coffee at a perfect heat range after that brewing cycle. Am I wrong?

I have the same Gen 1 fellow ode with Gen 2 fellow burrs, and I've used 7 as well for grind settings. Isn't 1.9 to fine for the moccamaster?

Currently being produced! The pre-stainless launches are headed out the door - slowly. It takes us about 19.5 hours to produce each one. Stainless, we should see this spring!

I agree on the shaking for fines, but the pre Bloom stir In my eyes and the paperfilter Rinse is easy done and lends itself to noticable improvement

I don't personally go to all the trouble in the video, but I suppose you could do larger batches and separate/seal them in the right quantities. I have very good tap water, so the idea of 'making' water seems absurd to me. If I had crummy water, I'd probably be obsessed, though.

Luke, I'm surprised you suggest using distilled water and then adding a Third Wave Water Packet to get the perfect blend of mineral water. The Moccamaster instructions say, "We do not recommend using reverse osmosis filtered water or distilled water, as it can damage the brewer's boiling element."

Yeah it’s bs. His recipe is completely fucked. He mixes his own water, uses all the most expensive and useless tools and then brews at a ratio of 1:14 or something because he thinks 4 cups=500ml🤡 😂

I like how you think an Ode Fellow grinder is cheap. It’s over $300, you die hard coffee snobs are something. I weight my water and beans, but not going to shift my grinds when I’ve paid for an expensive machine. Also get a zero water pitcher don’t need those packets you’re taking about.

Once you've had what YOU consider a GREAT cup of coffee that doesn't get worse as you drink it and tastes the same cup after cup, brew after brew... day after day... well, you get it🎉... It's no problem at all❤

What’s lacking in all these videos is someone actually making a full pot of coffee, you have half a pot there & didn’t even fill the water reservoir to its max. Perhaps it’s just not possible to make a good pot of coffee with more water? If not, I just wish folks would say so. Is half a pot of coffee the max you can do while still keeping it quality?

I think it's the opposite -- the machines are designed to produce good results with a full pot. So, people are more interested in making a half pot that's perfect. By the way, that 'half pot' that he made is really only the equivalent of a large coffee at McDonald's... about one serving, for me. I might drink two, some days.
