Recipe Steps:
1. Wrap the prime rib tightly with butcher's twine in a grid shape to keep its form.
2. Apply water or mustard to the meat and season heavily with your favorite dry rub (high in salt, low in sugar).
3. Insert the ChefsTemp ProTemp Plus probe into the center of the meat to monitor temperature from your phone.
4. Let the meat sit for 30 minutes to 2 hours to absorb the seasoning.
5. Sear on high heat (500º) for 30-40 minutes, or until a dark, crusty bark forms. Sear all sides.
6. Lower grill temperature to 300º and cook until medium rare (130º-135º).
7. Rest in a foil pan inside a cooler for at least an hour.
8. Slice into 1/8 inch thick pieces and serve with horseradish.
