Welcome to Paris. Home of the Mona Lisa, the Eiffel Tower and our restaurant for today - Plénitude.
It opened in 2021 and was awarded 3 Michelin stars in it’s first year. The head chef is Arnaud Donckele. Crafting a menu that puts sauce in the spotlight is genius. In French cuisine, sauce plays a major role, but maybe not the attention it should. Chef Donckele gives it that attention.
I can honestly say my experience at Plenitude was perfect.

It's more that (except his normality for him to spend such figures for a lunch 😅) he acts, speaks and has the kindness of a "ordinary person". He's often surprised and humbled by the service and kindness he receives, not demanding it.

Even normal or 'poor' people will spend $40,000 on a car when they could've spent $17,000. Of course you won't get to go to these restaurants constantly or even routinely, but if it is a thing you want to do, it's shitty to have to go through life thinking it's denied to you or it's "for other people." If you make $40,000 a year, is it worth it to go to these restaurants? Fuck no. But is it worth it to have your *first* experience at such a restaurant? Yes. And is there someone special in your life who deserves to come with you and can get over whatever hangups they have about eating there? If so, the yes becomes a fuck yes.

@@hymnofashes Say what you want, I come from the place where literally none of my friends ever visited Michelin star restaurants and everybody (including me) firmly believe 1000 EUR for a meal is an absurd amount of money. In 18 European Union countries this is more then a monthly minimal gross salary. What's more, citizens of only around 30 countries can afford it based on the minimal monthly salary. That puts things into perspective.

As a former chef's apprentice who got dissatisfied with the profession, your series of videos have rekindled a certain love for gastronomy in me that I had long lost. Thank you and please keep making videos. I would really enjoy an off-series about your own restaurant, not necessarily as a marketing point of view, but just stuff you'd like to showcase that you personally really enjoy!

As you gain more and more subscribers, please stay true to your editing. Not having any of the crazy edits I see in most videos is a blessing. You focus on the food and the experience without showcasing yourself in odd ways throughout the video and its a very refreshing style.

I really like the "sauce centered" idea; this is what I always tell guests at my restaurant- I, and many others, can cook a piece of beef or duck beautifully, but what I cannot do is make a luxurious sauce, and this is a main part of any good restaurant experience. Sauce-making takes an enormous amount of time, labor, and understanding. Absolutely love your channel.

Also why chefs hate when people ask for an item with no sauce and then complain they don't like it, its not an optional extra, it IS the dish, you are intended to eat them together for a full experience

Yeah, that cheese cupboard would be a big temptation for me, grab "them cheeses" and devour them with a crispy baguette and flush 'em down with a couple of bottles of those fine wines, and then, take home a plate or two, to add to my collection. The desserts looked fantastic and delicious too, but, most of the other offerings, I wouldn't even have tried, because I don't like seafood. I love the old fashioned 19th century style classical French food, laden with truffles, foie gras and lots of creme and even more butter, the style of the great Paul Bocuse, which many of these new upscale restaurants don't offer anymore. This is a great show and review and the host is a real specialist in his field. I am part Hungarian( my great grand mother) and it would be interesting if he travelled around Hungary and did reviews of Hungarian restaurants and food.

What I am really starting to notice is the recognition you get from the staff and the head chef's. I think they have the same respect for you as you have for them. I dont know what the culinary version of a standing ovation is, but this episode deserves it.

Yes I noticed that too, and I must say that's my own experience in some luxury restaurants as well (and though I like to cook, I'm not a chef). Appreciating some dishes/pairings/details is very welcome and sharing the enthusiasm/appreciation can open a whole new world. Once at a Michellin star restaurant my date was very impressed by the sommeliers choice and said "The one wine I could think of to pair this is dish with, is a [wine I personally forgot be she didn't], but that's not an option because it's almost impossible to get" and the sommeliers eyes lit up, he walked away and came back with that exact bottle. "You made me very happy. This has to be my favorite wine but it's way too costly so we cannot add it to our arrangement without it becoming too expensive". He opened the bottle, poured us both a glass, shared why this wine was so beautiful to him and asked us to come sit at the bar after dinner. After all guests but us left a few members of the staff joined us and the sommelier gave us all a private wine tasting. I already paid the bill for dinner (with a generous tip as I loved the experience) and the owner told me this was on the house. It is not something I ever expect to happen again and I'll never forget it.

For the people in the comments saying that they're lucky they can get a glimpse of a life they themselves cannot afford through this channel: You can! I myself don't have a high paying job at all, but I save money for those kind of experiences. Sure, I can't do this on a regular basis like Alexander, but only once or twice a year. Nonetheless, it is very much worth it for me! I don't see it as going to a restaurant, but more like having a "mini holiday". It's all a question of priorities.

It's not much more expansive that, let's say, a trip in the US (if you're European). But then it just depends on what people like. This restaurant is insanely expansive, but it's also a genuinly unique experience.

Yes Sir! I cook for a living and I’m able to afford travel. Saving rn for a two week trip to France next yr. The Airbnbs I found cost less than any place I’ve stayed in LA! I scored a reservation at Plentitude. Since watching this video and learning of the astronomical prices I’ve started a second line cook job. I’ll be working 6 days a week, 10 maybe more hours a day for the next year just so I can flourish at Plentitude next Oct. It’s definitely possible!

For some time now I have had the desire to eat at a Michelin star restaurant, especially a 3 star, but after watching this guy's videos my fears have been confirmed. Not only would I not be able to appreciate the food due to my simplistic experience with food but even if I could understand what I was eating I don't think I would walk away amazed. It's just too much presentation and high price.

Presentation is more like a requirement. The best food on earth could be served in a bad looking way and it would subconsciously ruin some of your tasting. Its not to hide an OK food (not at this level anyway) if its what you fear But your right about the taste. Taste is memory, and a newcommer could be oblivious to some subtleties. If you like food, however, make food yourself, know what good product is, and dont just eat sugar/salt insdustrial garbage, you could apreciate the experience. MAybe start with a reputable one star.

Go to a 1 star Michelin restaurant. Get the tasting menu. You don't have to have lots of wine. Probably cost you €100. It's a good experience.

@@845835 I only went to a 1 star for the first time a few months back and the defining feature was that everything was delicious. Mad ingredient combinations resulting in deliciousness. Everything was nice, the service was perfect. There were as many staff as customers for instance. About as unMcDonalds as you can get.

I was able to get a reservation two months and one year ahead of time. I’ll be there Oct 2024. Thought it’d be harder to get but I just sent an email in French asking nicely.

Your videos are superb and I applaud every aspect of them. The prospect of 2000E for lunch - even though I can afford it - is unfathomable. I have the greatest respect for what these restaurateurs do - but it is fairy tale silliness but for .01 percent of the population and those that enjoy your wonderful videos. I would appreciate your responding by telling me “to eat cake” - as such a whimsical response would be well deserved. Please continue to entertain us - you are doing a great job.

its definitely not a 0.1 % experience. Its just a matter of priority. Many middle class people spend easily 1000 euros over a year on silly things. Just save them and have a amazing culinary experience. Im not rich and I have done many 3 michelin stars in my life. Im just loving gastronomy. The hardest part is more to manage to get a table.

It is a .1% experience - actually less. Yes - many can save to do a 2,000e lunch - but very few allocate such resources to do so. I work with bankers and lawyers - all of which who can afford it - but even then only an exceptionally small number would spend that much on lunch. And these are people that can afford it.

All my friend has been at least once to this type of restaurant and we all earn less than 2500e per month. Its certainly not a 0.1 % experience. If nobody does it around you, its probably more a culture issue. And by the way, my fast food budget is zero euro per year.

I love this content. Something sort of similar happened to me once at a small restaurant with a wine pairing where, in this case the owner, gave me a glass of an expensive wine (not 1000 Euros per bottle in your case but hundred-ish per bottle), I said something along the lines of he shouldn't have, he's too nice and he's losing money on the wine pairing. He then confided that he was already going to open the bottle to share with the staff when service was done and the thought I should have a glass as well. There are a lot of passionate people working in restaurants and it is one of the reasons that going out to eat it is my favourite hobby.

I would encourage everyone to try a 3 star restaurant at least once in their lives. Obviously don’t if it’s not within the budget, but if it is then its worth it. My wife and I ate at the salon at Alinea in Chicago last October and to this day I can still remember what everything tasted like.

Just had dinner here… it was awesome! If you get the opportunity give it a try! Love the focus on sauces and desserts were excellent. Desserts I particularly I liked as they were balanced and complex vs. just being sugar bombs. As he said wine list is amazing!

Holy c_, would not have taken a connoisseur to give this place 3 stars just by everything you've shown us, save for the actual quality and taste of the food ofc. This has since become one of my favorite channels on YT. I love to travel, but many of my culinary adventures during said travels are from night markets, little holes in the walls, local favorites. Very seldom do I ever get to visit a place with a michelin star, but here you give us a beautiful view into some of the greatest, most prestigious and creative restaurants in the world.

I've not watched all of your videos by any means, but of the ones I have seen, this one seems like the best experience for what I would like to enjoy. Quirky, but not too much. Inventive and creative food, but not unrecognisable. And I'm from Northern England so gravy runs in my veins. I've heard that in great French restaurants they have at least one chef who are entirely dedicated to the sauces. I'm no chef, but I do love to cook at home and a good sauce can turn something bad into something decent, or something good into something great. I imagine a great sauce can go even further. My parents are of a generation where they'd consider a meal for two costing (for example) £400-£600 would be a "once in a lifetime" thing. But for me, I think if you really want to enjoy that experience and don't have a huge amount of income, it's something a normal person could enjoy maybe once every year or something like that. Hell, I'm spending £250 on four nights in a hotel in a couple of weeks time and I still have to eat and drink for four days at my own expense. Realistically, this long weekend will cost me £400-£500 and I do this sort of thing on (usually on a smaller scale) a few times a year, so I don't think it's that unreasonable to spend that sort of money on one really special evening. As an aside, I recently went in for a drink at a restaurant that has pretentions of Michelin stars (I think they did have one star a few years ago) and I noticed they had a job advert posted online. While their job advert demonstrated really good employee benefits, the guest reviews suggest that it is - at best - average food, poor service and extortionate pricing. While part of me feels like I might be able to raise the standard of service on the bar or potentially as a server (I am significantly more experienced as a bartender than as a server), I'm not sure I'd want to deal with the lines of dissatisfied guests without the management-level authority to deal with them or make appropriate changes to policy/working practices/menu/pricing structure to actually stop complaints.

Ok, that was crazy. 1 - Bites Crab tart. Oyster. Marinated root vegetable roll. 2 - Amouse-bouche Grilled octopus perfumed with smoked pepper infused with ginger and tomato sauce (Octopus broth, tomato compote, coriander infusion, ginger, lemongrass, smoked butter, lemon olive oil - Smoked pepper). 3 - Bread and butter 4 - Amouse-bouche Sea bream. The sauce is a coulis made with asparagus and chlorophyll (sorry, no further details). 5 - First course Ravioli with truffle and artichokes + focaccia. The sauce is a bouillon (no details). Ruinart Champagne + Le Petit Cheval (Bordeaux Blanc) 2019. 6 - Second course Sardine, Fennel, and Tarragon. The sauce is a velvet sauce (Grilled sardine, escabeche stock, Lambrusco vinegar, bonito vinegar, lemon juice, olive oil infused with Mexican tarragon, egg yolk, Callas mustard, fennel - Allspice). Trimbach Riesling 1997. 7 - Third course Turbot and Caviar. The sauce is a broth with oyster and brown butter (Fish stock, caramelized lemon and lemon balm branch, dry plankton powder, abalone juice, brown butter, flat oyster, lemon olive oil and Furio wine vinegal - Verbena pepper). Le Montrachet Grand Cru. 8 - Palate cleanser Apple sorbet with Calvados (apple brandy). 9 - Main course Grilled pigeon breast, leg wrapped in potato and a liver canape. The sauce is a jus that uses meat broth and has flavors of truffle, black olive and rosemary (Grilled pigeon jus, shallot reduction with sherry vinegar, Val de Blois olive, Bouteillan olive oil, Cabernet red wine, rosemary, roasted delicacy potato skin - Caraway). When I was a kid, we don't have that lots of money. But we were able to eat delicious food occasionally, so I made it my goal that one day, I will work hard to afford good food. Now, I can eat whatever delicious food I crave. I did it. I am happy. I am content. Then I discovered your channel. I have never tried going to high-end restaurants before. So watching your videos gave me a new purpose in life. Now, I dream of actually going to the restaurants you highly recommend. I thank you for that!
