Quang, I don't eat carbs anymore but your technique of heating the sauce back up in the pan with the olive oil and then tossing the pasta in it is AMAZING. It adds a little extra time to making the meal but it's 100% worth it. I was always someone who had to eat their sauce on top of their noodles and not mix it around until I tried this after seeing your video. I so badly miss doing this.. birthday is in a couple days and I'm gonna go all out.
Your pasta feels mushy because it didn't develop enough gluten, you didn't knead it for long enough... gluten gives pasta the firmness you're looking for, I promise! GLUTEN=TEXTURE! You can improve the texture of your pasta if you knead it for longer with the roller - it helps the dough develop more gluten and makes the dough colour lighten. Pass your pasta through your roller at level 1 about 6-8 times while folding the dough before every pass. And then after you've done that, gradually flatten it up to whatever level you prefer! You can also add texture or 'bite' to it with some semolina flour. Add some to your dough, it gives texture and colour.

Quang I would advise that u start eating healthier, unless behind the scenes ur on a diet or something. Because you’ve been eating a lot of fat recently. I wasn’t saying anything before cuz u used to workout, but now because I’m a caring fan, I suggest eating a little healthier in ur vids, maybe putting a salad on the side of the foods u make
