According to the WSET 3 textbook, you should serve dessert and fortified wines colder than sparkling wines. Why would you do this?

My guess would be to tone down the syrupy sweet viscosity. But I’d only do that with a clean white dessert, like ice wine. I think I’d want everything else just slightly chilled.
