Welcome to science at home episode eleven, season three. In this episode we make homemade dippin' dots ice cream with liquid nitrogen. dippin' dots are made by slowly dripping the dippin' dot ice cream mixture into a beaker of liquid nitrogen. Along with explaining why the dippin' dots freeze so quickly, we will also be explaining what latent heat is . By the end of this video you will be able to describe why dippin' dots freeze so quickly, how how the energy is transferred between the dippin' dot mixture and the liquid nitrogen and how to create your own delicious bowl of dippin' dot ice cream.

Equipment and Ingredients:
1 Cup - Whipping Cream or Heavy Cream
1 Cup - Skim Milk
1/2 Cup - Sugar
1/2 Tsp - Vanilla Extract
Flavored Syrup (Optional)
Large Mixing Bowl
Wooden Spoon
Narrow Nozzle Squeeze Bottle or Turkey Baster
Pyrex Beaker/Bowl or Metal Bowl
Measuring Cups and Spoons
Liquid Nitrogen
Cryo Gloves
Lab Coat or Apron
Full Face Shield

Daiyan Mahfuz We are going to test it for October. We have to see if there will be any interesting results to do a full experiment with.

How does the liquid nitrogen make the ice cream into dots and not a big... blob (I guess :P) P.S. You guys are da bomb!!!

+Elyse Hawkes We drop them in slowly and in little droplets and they freeze to a solid so quickly that they stay in that droplet size. If you pour the ice cream in faster, it will freeze into a larger chunk.

Great video! I would do this but i working with liquid nitrogen is too dangerous for me

Silverarmydogs It's not as bad as I thought but it's always better to avoid experiments you're not comfortable with. If you don't want to use liquid nitrogen, check out our video on 10 minute ice cream for another way to make quick ice cream.

how much does a botttle of liquid nitrogen cost i have a plaxair right by me

+caden ericson It depends on the volume of liquid nitrogen you want. I think to fill the container we rented it was around 150 dollars and that included the rental of the container. My best suggestion is to call them for pricing because not all praxair locations carry liquid nitrogen.
