How does a sprocket change affect the HP and Torque of the engine?

@@Spac3Monkey It does not affect the HP and Torque of the engine itself (BHP), but it does affect the distribution of this power to the rear wheel thus to the ground (WHP). A smaller front-sprocket increases torque (for example, easier to wheelie), but decreases the top speed. A bigger front-sprocket increases the top speed, but decreases torque. The rear sprocket works the other way around. A bigger rear sprocket increases torque, a smaller rear sprocket increases top speed.
