Here’s your recipe!
1/2 Cup Onion, Finely Chopped
1/2 Cup Green Pepper, Chopped
1 TBS Butter
4 Oz Corkscrew Pasta, Cooked and Drained
1 Can SPAM, Cubed
1 Can Cream of Mushroom Soup
1/2 Cup Catsup
1/3 Cup Cheddar Cheese, Shredded
Set oven to 400. Cook onion and green pepper in butter until tender. Combine vegetables with remaining ingredients. Pour into a 1 1/2 quart casserole. Cover and bake 30 minutes, until bubbly.

I have that book! My mom made this dish one night when my grandparents were coming over for a school program. It was delicious, we all agreed ... and we never had it again. One time my dad spent an entire Saturday making the coq au vin recipe from this book. It too was delicious ... and we never had it again.

I love me some spam! Watching you make this made me so hungry Jill! At first I was thinking cream of mushroom soup and ketchup? But then a little voice inside my head was telling me to trust the 70’s and trust Betty Crocker! Lol. This is definitely worth a try. Awesome job my friend 🌟🧡🍸

Very true Audrey, sadly. But like I always say, there is nothing wrong with embracing the past through food if you only try things once or twice a month. I'm not so lucky, LOL! I'm still in Palm Springs and will be heading back to Idaho around May 1. Have a beautiful weekend!

Hi Jill, Love seeing all your recipes but Spam is some thing I can’t tolerate. Maybe it depends on if you grow up with it or not but we never had it and I just don’t care for it. Hi Dolores!! So great to see you! I get it, SPAM is a love it or hate it kind of thing. I really didn't grow up with it but tried it as a single mom with three very young kids and loved it! But this casserole would be great with, as Big Bad John said, smoked sausage instead. Have a beautiful weekend!

Hi, Jill! First of all, Palm Springs would be a great place to be in the winter. Dec 3? Wow! Definitely ahead of time. That casserole looks good! I was not expecting the ketchup, but it wouldn't be a Jill video without cream of mushroom soup, lol I am sure your neighbor loved getting Spam. Thanks for sharing!

Hi Parnell! Yep, you know me and my cream of mushroom soup! Well, I have no choice, it is the 60s and 70s after all, LOL!!!! It actually works beautifully! And I am filming for July now. I do that so I can travel and take vacations. It is so much work filming so far in advance, but its worth it! Have a great week my friend!!!

Looks delicious! I grew up eating Spam but rarely have it now. I think I'll try this recipe myself. I live alone but maybe I can freeze what's left. Any idea how it freezes? Anyone? Thanks for sharing this recipe with us! ~ Carolyn 🌺

Hi Carolyn! Thank you so much! This really is just fabulous and will freeze well. Just package it up in your preferred serving size and freeze. When ready, defrost in the frige and give it 3-5 mins in the microwave depending on your serving size. You'll love it!!

Uh, oh... Now my Hubby is going to want to eliminate me and your Hubby! He's definitely going to want you for his and his alone. Yes, he and I both grew up in the era and at the same economic level which necessarily meant a whole lot of Spam in our family meals as youngsters. For folk like my Hubby, that means he has a never-ending love affair with Spam. For folk like me and my siblings, that means we won't touch it. He buys it himself, because I won't, and makes the kitchen smell like nothing other than Spam can make it smell at least three times a week for breakfast. That being said, I do adore him and vow to make this for him as a dinner before the month is out. You really know the "goods", Jill!

Awwww Constance! So many smiles while reading this! I get it. Spam has lots of history in families, good and bad. Childhood memories are always attached as you will read in my book! But I commend you for your vow and if that is in the cards I will tell you a warning.... I am very high maintenance.....Just ask my hubby. LOL!

I grew up with Spam. My mom used to put Spam, onion and cheese through a meat grinder, spread on hamburger buns, wrap the buns in packs of 3 or 4 in foil and bake them until the buns were crispy and the cheese was gooey. So salty, but sooooo good!
