Uh, guys? Water (H2O) has but one oxygen per molecule. If you had two, you'd have H2O2, which is hydrogen peroxide. Which you might know as the fizzy stuff you put on a cut, but that's only a 3% solution. It gets really nasty (as in, it detonates on impact, and can be used as rocket fuel if you're careful enough) at concentrations above about 70%. Yeah, H2O2 would be hydrogen peroxide... now of course, if you are looking at water dissociation species in a basic medium, then you get 2H2O - > H30-+ and OH-, but somehow I don't think that's what you folks were getting at. FYI, the substance that makes chillies spicy, capsaicin, doesn't dissolve in water. Drinking water just spreads it around your mouth. Capsaicin does dissolve in fats and oils, which is why full-fat milk can help. It also dissolves in ethyl alcohol, but the alcohol has to be at a sufficiently high concentration. Most beers are too weak to make much difference. Wine in the range of 12 - 14 % abv is better, but a fortified wine (such as port, sherry or madeira), with an abv of about 20 %, is more effective still. Spirits such as gin, whisky (or whiskey, depending on where it was made), vodka or rum are just as effective, but most people don't like drinking neat spirits so that may or may not be a viable option.
