Piadina is an Italian flatbread that is usually filled - in this case, with sausage and red onion! The sharp pickle, peppery watercress and charred sausage work beautifully together but you can really fill them with anything you've got knocking around after a pizza party!

Made this yesterday and was delicious. Is there any tips for stopping the dough puffing up in to a ball? First one caught fire then I used the peel to keep them down after that. Wondered if there was a better way?

If you really want to avoid lard then I would suggest coconut oil, which is solid at room temp. Extra virgin will give it a coconut taste, which I wouldn't want. Best to get hold of the stuff for cooking ("deodorised", it's sometimes called), which has no coconut taste. I don't know about butter.

Hi Kevin, if you want to avoid the lard in the recipe you can substitute in melted butter or olive oil and the breads will cook fine. For the classic foldable nature of the dough and unique taste however I'd use lard if you can.

I have been all over Romagna, and this isn't *remotely* what piadina looks like. Not even close: this is like some alien naan bread. Piadinia is NEVER crisp, NEVER burnt, and NEVER cooked in a pizza oven. It's cooked on a hot terra cotta or metal surface and flipped. It's always made with lard or olive oil. For a real piadina recipe, see Marcella Hazan's Essentials of Classic Italian Cooking.
