Today's recipe is a very simple and delicious chana masala recipe.

to cook the kabuli chana perfectly
take 1 cup of kabuli chana ,wash it well thrice under running water.soak in 3 cups of water for 6-7 hours.add the chana along with the water to a pressure pan/cooker ,cook for 1 whistle on high & simmer(cook on a low flame)for 10 mins,let the pressure pan cool to room temp,open and retain the liquid for the recipe ,strain the chana.please do not throw out the water/liquid in which the chana is cooked.we are going to use that in the recipe.
To make the chana masala powder mix

Dry roast
3 dry kashmiri chillies
2tbsp of corriander /dhania seeds
2tsp of cumin seeds
5 cardamom s or elaichi
1inch cinnamon or dalchini
10 peppercorns
Once cooled down grind in a mixer pot and add 1/4 TSP of haldi/turmeric powder
As well as 2 tbsp of aamchur powder,
Ingrdients
1 cup of kabuli chana cooked
1 green chilli finely chopped
1/2 inch of grated ginger
3 tbsp of finely chopped onion
1 tbsp of coriander powder
3/4 tbsp of Kashmiri red chilli powder
1 tbsp of chana masala powder
2 medium tomatoes very finely chopped
salt to taste
1/4 tsp of sugar/jaggery
1 tbsp of crushed kasuri meethi
1/4 tsp of chaat masala
2 tbsp of finely chopped coriander leaves.
