It's probably impossible to figure out gokus birthday, he was born on another planet with shorter or longer years, meaning more or less months. And it wouldn't really be possible to figure out the month of Planet vegeta to the month on earth at the time he was born.

At this point we ought to consider goku day/may 9th is the closest we’ll get to goku’s birthday, sinse toriyama sensei unfortunately passed away I don’t think we’ll ever know for sure.

All I know is that he and vegetas birthday is on the same day, since their b-days reset everytime they enter the time chamber for a day. Their new b-days would then essentially be the day they come out, and they’d be a year older or so. At that point there actual date of birth would just be for celebration and not really for aging another year.

This is actually a fun coincidence that in that shonen, no birthday is given. After the destruction of planet Vegata, all records of Kakarots birthday were probably lost. That is the reason that Goku's birthday will never be known.
