Yup, maltose is the authentic way to go. But it costs an arm and a leg to buy here in Norway. I miss the streets of Hong Kong, and hawker stalls of singapore when thinking of this dish. Mmm char siu, Tsingtao and smelling the aromas from the stalls. My first teenage gf was half chinesem (25 years ago). The girl migh have had a chinese temper, but oh boy do I thank her and her dad for the introduction to char siu.

Does this melt in your mouth? I went to a hawker the other day and it melted in my mouth. they use a smoker though, not an oven. Any tips on how to achieve that melt in your mouth texture? Pork butt?
