They are all fairly close in dmg. Evade Bleed is the best if you only have one rapier in your group. Evade bleed gives you the dmg from the evade build but also allows you to pop the bleed at 3 stacks. Its a little harder to play and the evaded ability can take awhile to get use to. If the boss hes no back for crits, regular bleed is better bc of keen tondo. If you have 2 rapiers in the group, you can only have on bleed, so the 2nd would go evade. Hope this helps!
You can pair basically any weapons together. However, the VG scales with Int/Foc so you will not be gaining any dmg by going GS with Dex/Str. The VG is a weird one though bc the empower from oblivion is good, so you could drop oblivion and stand in the puddle for the empower. You could also put a cut pristine amethyst into the GS to convert half the dmg to void. Hope this helps!
