Please correct me. When I googled, 100g of barley has 73.48g of carbs and wheatflour has around the same 72.57 gm. But in the video you have said, barley has very less carbs when compared to wheat flour. why ??
All prebiotic contents described are in raw form . These are mostly disintegrated when cooked. So barley , lentils and beans consumed cooked will be of no use
Do we get the benefits either fully or partially when consumed after cooking since most of these items mentioned by you are in raw form and necessarily requires cooking.Kindly clarify.Your clarification will be useful for those who want to try.

Barley is rich in Net Carbs, GI doesn't indicate the how much of blood sugar spike. Barley has almost 60 gms of NET carbs per 100 gms, which is too much for a person with metabolic issues - diabetics per say
