The Ultimate Tear & Share Christmas Bread | Rosemary & Cranberry Brioche Recipe

It’s been a while since I made my sweet and savoury monkey bread videos. I thought that a brioche version would be perfect for Christmas, so here we go. Monkey bread is a loaf of bread made up of many little pieces. The dough is dipped in butter and assembled in a tin for baking. The butter keeps the dough pieces from fusing together completely.
The result is a loaf of bread which can be picked apart piece by piece and eaten as a tear & share snack. I decided to infuse the butter with rosemary and dot some cranberry sauce inside the loaf. Served with a baked camembert cheese this makes for an amazing snack. It is so irresistible. I could not stop eating this bread until it was gone.

This one sounds so delicious - I prepared the brioche last night so I can bake this today (plus another recipe from your Brioche playlist). Hello, Lan. Monkey bread is delicious when prepared with orange zest in the dough. Then the dough is pinched off, as Charlie does. The dough balls ate rolled in a mixture of melted butter and orange juice and then rolled in cinnamon sugar. When I used to make it, I baked it in a bundt pan, but use what you have. I have an event coming up this weekend and I think I'll make Charlie's recipe and the orange cinnamon.

I do the exact same thing with the camembert but I add some olive oil, a sprinkle of salt and some thyme to it too. Delicious 👌🏻

Baked this recipe in two smaller 1lb loaf tins (tall/shorter than standard 1lb loaf tins). Switched the Camembert for Brie and the Cranberry Sauce for a triple fruit spread. So delicious - the buttery brioche with a slight hint of rosemary, the sweet fruit spread and then the creaminess of the melty Brie. Will be sharing one of the loaves with my brother and his wife. Thank you for this "ultimate" recipe!!! Photos have been posted on "Charlie's Baking Buddies".

You're my fave RU-vid channel for bread. I love the variety, clear directions and simplicity you present. I wanted to ask if you would consider adding Arepas to your world tour? You have Somun & Ćevapi which is along the same lines from Bosnia. Arepas are from the N of S America (Venezuela and Columbia).

Never tried a monkey bread before but regularly do a tear and share where I make a basic dough, divide it into balls and stuff them into a baking dish to prove and then bake. Will definitely try this one!

Hey Charlie - this looks fantastic! I'm making it for Christmas lunch with the family - so fingers crossed, its my 1st brioche attempt. I've been missing making the delicious chainbaker recipes as I've been on a keto diet but not for christmas! I kinda did a half by machine half by hand as my mixer didnt want to pick up the dough properly and wasnt giving it the love it needed - so popped a can of elbow grease 😎

@@ChainBaker MmmMmm MMMMM so good and a hit at 2 Christmas lunches! Having made enough brioche dough for 2 loaves I froze the 2nd one after the 24hr cold ferment and then defrosted it overnight so in the morning it was ready to go - BUT I forgot to take the cranberry sauce to where I was staying. I figured honey could be a good alternative so it was a Honey, Rosemary Brioche with brie and was (again) fantastic. Thanks Charlie - Merry Christmas and I'm looking forward to some more baking delights in 2023! Have an amazing one!

Where do you live??? I will gladly stop over when it's done😂 Need to send this to my daughter, she makes all the more time consuming and fancy things while I now enjoy my sourdough bread I baked last evening, with butter and garlic, almost makes up for this brioche 😉

Charlie...I have an embarrassing question.... My mixer, which I stopped using because the bowl has a feature that sticks up at the center. It has ruined the attachments and stains the dough or anything else The amount of length of kneading for brioche of this recipe and the volume, how do I achieve that by hand?

In the printed recipe on the website he included a link with the method to make the brioche dough by hand. It works well, just a long time for hand-kneading.

If your mixer is a KitchenAid bowl lift type, it can be adjusted. There is a adjustment screw located behind the bowl lift slide. Make slight adjustments on the screw with the paddle attachment in place, the bowl up and a "dime" in the bottom of the moat of the bowl. The proper height position of the bowl is for the paddle to just barely touch and disturb (whisker) the dime as it rotates in the bowl. I had the same problem before finding the cure. Luck to you.
