A really good reason to buy a WHOLE Chuck Roll and cut your own. Buy one for like $5-$6/lb on sale. You can get 2-3 Chuck Eyes, 5-6 Denver Steaks (if u want that many), a Sierra Steak (almost identical to flank steak) and some trim for ground Chuck-best burger meat. And its super easy to break down with minimal butcher skills

The history of the Denver steak is really cool. It was "invented" in 2009 in an effort to find more "uses" for parts of the animal.

I’m guna have to try the Denver cut!! I smoke tri tips like briskets all the time! Good smoke ring. And almost pull apart, it’s perfect to cut and easy to fork! Briskets expensive in these parts so I do tri tips! Ppl ask me all the time if it’s brisket😂

Recently purchased these and Chuck Eye Steak from Porter Road, both are delicious. Chuck Eye is one of the best steaks I have had. I will try the Denver in the low and slow method next time.

I've watched a lot of your videos now. and one question I have is what is the best way to go about learning to do a brisket? should you just jump into it or have some one walk you through it in person?

I’ve been buying them at my local Kroger for several years. They were well marbled and seemed like a less expensive alternative to ribeyes. They definitely aren’t as tender if you cook them like a regular steak, but the flavor is great. I like to sous vide then sear. I haven’t yet tried braising, because I usually just buy a small chuck roast or short ribs when I want to braise beef and make stew or chili or something along those lines, but I think I’ll give that a shot. Maybe make some tacos.

Porter roads is most worth it if you stock up big and get the flat rate shipping, it was $40 to california on a $236 order ($276 total) with a chuck eye, 2 tri tips, a picanha, a volcano beef shank, and a pork tenderloin. I just had the chuck eye for dinner tonight (sous vide with my own steak rub and home made smoked salt, seared with a large torch (weed burner/sous vide gun style, though I spot finish with a TS8000 as well if it isn't even enough). Most of the rest of it is for the 4th, we've been wanting to try picanha and that volcano beef shank is honestly a great deal considering it's like 4lb of meat on that thing just about for the one we got. Gonna smoke the pork tenderloin after an asian marinade of some kind, then use it in chinese cooking or ramen, haven't decided which yet (gotta talk to my sister since she may want to cook the rest of it if i'm making the meat). But yea, lots of meals will be made out of that order, it made the overall cost not nearly as bad as what you're seeing, and it was for a special occasion that we were going to splurge on anyway. I hope this helps people out who live far from kentucky but still want to enjoy some of their dry aged beef, I personally would have spent about the same on the meat itself buying it locally from my butcher of choice for something of similar quality, but if the chuck eye I had tonight is anything to go by, this beef is going to be some of the most flavorful I've ever had, and that's saying something because I've been friggin spoiled out here. edit: also of note, I did not pay for the entire order, I split on it with a friend which helped us maximize our purchasing power with the flat rate shipping. Maybe you have some friends or family who'd like to buy an order with you?
