My chemistry professor used to do that demo with three balloons: one of oxygen, one of hydrogen, and one mixed. He didn't use a ten-foot pole, either. It was a candle taped on the end of a yardstick. He said he enjoyed a "bit of whizz-bang".
I remember we got to ignite gasses we created through electrolysis. Our chemistry teacher in high school was great. This wasn't that long ago either. 2004. Sodium and water was another fun explosion. However, the teacher had to handle that experiment. And for good reason. Sodium metal and water don't like each other very much. Or they absolutely love each other, come to think of it.
