I am interested to know what is meant by なまkimchi. Does that mean it has not been fermented, it is raw cabbage with kimchi spices? Actually the cucumber pickles looked the best part of the meal to me. I ate at enough yakiniku places in Japan last Nov and Dec; that made me question the idea of menus made up of different cuts of the same animal, also of cutting these things with scissors during or after cooking. The yamitsuki (chudoku?) horumon looked appetizing, but then to have rumen in the fried rice? Because of my father's work we traveled all over the world when I was young, and I can remember in a Chicago steakhouse when I was 11 I devoured a 12 or 16oz steak, shrimp cocktail and a half an iceberg lettuce to start, baked potato (no children's menu thank you) and I had not trouble with the steak or finishing everything because everything else served was so different. Of course, in those days I didn't drink alcohol. . .But when I think of the kaiseki restaurants I went to this last trip, their menu conception seems exactly the opposite to these yakiniku places.

kimchi refers to a Korean dish meaning fermented cabbage with spice.
