The reason why it's called Missing Piece because they adapting the chapters they skipped between the stories. Most of the chapters they skipped are comedy and slice of life stuffs.

Oh and I'm actually surprised that Yasuda, the teacher, is almost non-existent except for the first ep in the 1st season like you pointed out. He's hilarious, the students all make fun of him.
