🌟 Unleash the full potential of your Thermomix® Cutter with this classic dish! Jiu Hu Char (stir-fried yam bean with shredded cuttlefish) is a dish that is typically labour intensive as it consists of finely grated vegetables. With the Thermomix® cutter, get this dish ready in minutes!
Ingredients
500 g yam beans (sengkuang/Jicama), peeled and cut in blocks that fit into wide feeder tube
100 g carrots, peeled
100 g cabbage, cut in wedges that fit into wide feeder tube
20 g garlic cloves
30 g shallots
20 g vegetable oil
30 g Chinese dried mushrooms, soaked until soft and shredded
20 g shredded dried cuttlefish, rinsed
100 g chicken breast fillets, skinless, cut in strips (3-5 mm)
20 g oyster sauce, adjust to taste
40-50 g light soy sauce, adjust to taste
1 tsp homemade chicken stock paste (see tips) or mushroom seasoning powder
1 pinch white pepper powder
Preparation
1. Place a large bowl on mixing bowl lid, weigh in yam beans, carrots and
cabbage. Set aside.
2. Insert Thermomix® Cutter shaft and basket then place cutting disc with side 2 (grating) facing up. Place cutter lid on cutter and insert yam beans in wide part of feeder. Place pusher and grate thickly 30 sec/speed 4, while gently pressing pusher down. Repeat if needed until all yam beans are grated. Transfer to a bowl and set aside.
3. Place cutter basket and disc back on shaft with side 2 (grating) facing up. Place cutter lid on cutter and insert carrots and cabbage one after another in wide part of feeder. Place pusher and grate thickly 30 sec/speed 4, while gently pressing pusher down. When feeder is empty, press selector to stop. Transfer to a bowl and set aside. Remove Thermomix® Cutter and shaft.
4. Place garlic cloves and shallots in mixing bowl, chop 6 sec/speed 6.
Scrape down sides of mixing bowl with spatula.
5. Add vegetable oil, shredded mushrooms and shredded cuttlefish, sauté 6min/120°C/reverse/speed spoon.
6. Add chicken strips, reserved grated vegetables, oyster sauce, light soy
sauce, chicken stock paste and white pepper powder, cook 10 min/120°C/reverse/speed spoon. Serve hot.
Tips
👉Best served with Chinese lettuce leaves or pie tee cups.
👉If you use a mandoline to shred yam beans, you are advised to reduce
cooking time to 6 minutes in step 6.
👉For popiah filling, omit cuttlefish.
