Actually, the falcon didn't exactly decapitate the duck's head. If you watch it in slow motion, the falcon actually hits the duck's head, causing it to flip, most probably resulting in death.

But the greyhound just doesn't have the aerodynamics (the steady head and tail) which makes greyhounds a bit slower. Respect for all these animals.
