The two characters you didn't recognize were fan-made Chapter 3 designs Mike is based on the name Spamton brings up multiple times, and the TV at the end of Chapter 2 Thesperus is a 100% fan made character who takes place as Chapter 3's Secret Final boss Also, Rouxls Kaard is pronounced "Rules Card" the little card with the instructions that decks come with And the song Spamton sings in his song, was Zavodila from Mid Fight Masses, with lyrics by Juno Songs (The guy who voices Spamton in this mod)

Susie's voicelines and unpitched chromatic are avtually sampled from Jasper from Steven Universe if I'm correct. Quite a fitting voice if you ask me!

I think there's a short and simple secret song if you keep restarting Showstopping at the start, it takes many restarts though

"Seam" (the shopkeeper that you play as against Jevil) is actually pronounced "Shawm", as a reference to how you pronounce the name "Sean". And it also might be more specifically a reference to Jacksepticeye (who's real name is Sean), since his Undertale playthrough is pretty well-known and Toby Fox (creator of Undertale and Deltarune) likes Jacksepticeye's playthrough. Also, as for Deltarune's relationship to Undertale, it seems to be an Alternate Timeline to the game, where some event happened long ago that changed the world, since the games share many characters but (literally except for Sans) they're all somewhat or wildly different from their Undertale counterparts. Oh and technically there's one extra song you missed that has a 1/36 chance of appearing when entering the song "Showstopping." It's very short, though, so it's up to you if you want to bother.

I know other comments have already explained, but the 2 fights you don’t recognise are 2 fan made predictions for chapter 3. “Mike” is supposed to be the TV from the end of chapter 2. Spamton mentions Mike in his dialogue, so The theory is that he will be the games next antagonist. The other one was the mod makers prediction for the chapter 3 secret boss. Seam foreshadows that we will need some really strong armour to beat them, and that’s literally all we know.
