Wingers can be of different profiles. Some cut inward into central areas, some have excellent take-on ability to get past players and then are simply there for keeping the pitch wide and crossing. Grealish is the 3rd one and is doing great.He can be a no. 10 at other clubs .

The midfielders create chances and serve the striker while the wingers draw the pitch wide so the full backs are occupied and the central players can do their work in spaces. The "dribbling with the ball to the corner" is to make the pitch wide. The "passing back"is for possession retention after spreading the pitch. If u understand the playstyle of the team,u would not be questioning his presence.U do what managers want u to, not what u want to. Pep gives u a specific role and u get freedom with expression in the final third. Grealish creates spaces for other players and he is good in finding players between the lines.
