I have felt a strong pull to start canning (I know, I know I should've seen doing it YEARS already!) My mom said "Well, grandma used to can everything! But I think it's a waste of money to buy all those jars and stuff." I had to shake that advice off! I get so excited to see all those homemade things, thank you for sharing. I can't wait til I'm making my own! God bless you!

@@lolam.9291 Barely! I have done green beans, strawberry jam and pickles... But that's it. I'm nervous to do meat of any kind. I veered off into gardening and didn't focus enough effort on canning because we use everything I grow so far. My 7 year old little boy passed away in March and I have not really put much effort into anything, if I'm honest. I'll never be the same but I'm learning I have to keep doing the next thing and the next thing. Thank you for reminding me of canning it could be a therapeutic outlet, maybe. God bless! 💜

I’m going to try your Strawberry Jalapeño jam recipe. My favorites to can are peach butter and dilly beans. I put in garlic hot pepp flakes with the dill. I will eat a jar all by myself. Thank you for the video.

I started canning using water bath years ago. My greatest influence was my mother in-law, God rest her soul, who made the best canned tomatoes ever! One of the reasons why I can is because my husband enjoys getting deals and buying everything in bulk, and I simply hated wasting foods, especially produce. After studying the art of pressure canning, early this year I purchased a pressure canner. I have canned beans, meats, and stews already. I would like to can more often, but it does take time. As I am planning on retiring soon, I would love to can regularly 😃… Thank you for the video.

Yes to potatoes, butternut squash, pear butter, banana peppers... I bought potatoes last year from Azure and canned several quarts. Still have a dozen. I am hoping my garden this year produces enough for the year.

I canned potatoes for the first time this year and loved having them! I’m definitely canning them again. Mine sprout really quickly too so I canned them so we wouldn’t lose them 😃

When I was a kid the neighbors had a honeysuckle bush and I was friendly with one of their kids. We used to go out and pull off the blossoms and suck out the nectar and it was so wonderful I wish I could taste that again. I am in a wheelchair now so for me to find a honeysuckle bush and then get into it I wouldn't be able to do it. :-)

I guess I'm the oddball here. I'm not really an ingredient canner. I prefer meals or meal starters where you may just need to make a roux or add one other thing to complete. Thanks for your input. 💞

I will always can: all sorts of beans (plain) ... saves a ton of time and so nice to have them handy. Also forever canning chicken, tomatoes, potatoes, and ALWAYS lots of bone broth! I'm not a big jelly eater, but will keep several little jars of tomato jam, apple butter and cranberry-pear preserves (maybe next time with jalapeno!). NEVER again doing herbed cherry tomatoes or anything that is seasoned with rosemary .. major funky taste imho (and rosemary grows year 'round here, so very easy to just use fresh as needed).

Thanks for doing this collab Constance I'd love to see these things just the reasons people like things and the reasons they don't you're good with your reasons. I never had canned dilly beans but I had had them before I knew I didn't like them so we didn't get on that train. The only bread and butter pickles that we seem to enjoy and not too many of them are the freezer pickles they're a different texture little different flavor but they are fun once in awhile. Thanks for joining the collab and I will look up a couple of your recipes they sound intriguing and like things I could really use

I had a tablespoon of onion soup mix to most of my carrots and I leave some plain but it's a game changer along with doing that for green beans!

Never heard of Honeysuckle Jam. As a kid I loved picking honeysuckle and loved them. Definitely want to try the recipe.

I have never canned dilly beans but I bought a jar at the grocery store. I opened the jar with anticipation of eating some delicious beans, oh my what a let down. I am thankful that I only bought one. Thank you, take care and God Bless.

Thank you for this wonderful video! I've gotten back into canning and I feel terrible when I can something I don't really like. Carrots were too mushy for me, but taste excellent, so I chilled them and put them on salad till they were gone. I hated the turkey lentil soup, microwaved, until I simmered it on the stove for 10 minutes. It was weirdly bitter from the microwave, but that went away when I heated it the old fashioned way-so strange. Thank you for that recipe for honeysuckle/ fireweed jam! WOW! Can't wait to try it! Thumbs up from AZ!

I remember picking them as a girl with my sister and pulling them apart for the nectar. I've got to try strawberry jalapeño this year. I agree with you Constance whole heartedly regarding canning dilly beans. My son asked me to can his wife some dilly beans which I did.. I had wondered about them because so many people on RU-vid loved them.. Wellllllll,,, Not this momma. I made them once and once was enough. I wasted good green beans and will refuse to make them ever again. I guess they turned out like they were supposed to but GAGGGGG.

I am very, very odd. I hate canned meat, cowboy candy, slaw, and 3 bean salad. My favorite things are jams/jellies, baked beans, all kinds of pickles, pickled beets, and peaches. Of course hundreds of jars of broth for cooking. Thanks for the video.

Thank you for sharing 😊 I grew a vine variety of beans this year that were not what I wanted as a green bean side dish. I gave a shout out to friends they all chanted “DILLY BEANS , DILLY BEANS!!” I love dill great idea. NOPE maybe I used to much vinegar. I loved the crunch but the just couldn’t do it.

I like to can bread and butter slices and Persian pickles, I like to can those as kosher whole dills. The recipe is called the blue ribbon dill pickles. I had tried to make Dill pickles, but they were always too salty. The recipe, Blue ribbon kosher whole dills is just right.

Honeysuckle jelly is good. I like violet jelly too and it is Very pretty in jar. I have not tried strawberry jalapeno jelly, I will try that one. I make a cherry jalapeno that is yummy too! I have to do jelly in small batches or it goes bad to quick now that most of my kids are grown.

I too have no basement or root cellar, so my fresh potatoes don't store well. But I was just gifted a slightly-used pressure canner, so I'll definitely be canning potatoes this year. Those jellies sounds really good. 😋 Spicy dill pickles are an absolute must. I've still got jars from last year that I made with cucumbers, garlic, dill & habaneros from the garden...OMG, sooo good. For soups & stews I've never tried canning but have had great success freezing them. The #1 thing I absolutely MUST can every year is salsa. A fair portion of my garden is dedicated to salsa ingredients. I grow lots of various tomatoes & peppers, onions & garlic, tomatillos, cilantro. I began making my own home-grown salsas years ago, and since then I absolutely refuse any store-bought stuff. So I always make enough to get me through the year & give some away to friends & family.

We love spicy dill pickles!! My family is big so we have to make at least 30 jars. I think we have 2 jars left from last yr. It's gonna be a game changer this year.

Loved it! I was wondering if you were going to mention any pork products, because we don't eat pork anymore either (or shellfish). It makes me think we need to be careful when we spend lots of money on food to store--because one day we may change our minds about eating that. Like wheat if you need to go gluten free. I've given away a lot of commercially canned products like soups and pasta because of that. But anyway--I'm currently focused on using up my own canned stuff that I won't can again. This week it's "Green Tomato Jam". I thought I didn't like it because it was chunky but last night I pureed the last jar and a half to use kinda like jelly or pancake syrup, but I realized I don't care for the seasonings either. So I went to my canning recipe folder to find and toss that recipe and couldn't find it. I must have decided a long time ago not to make that again, lol.
