Jose Andres is one on my favorite chef, not just because he is an amazing chef but also because he is great humanitarian. He uses his star power to help hungry and malnutritin people all over the world : ) P.S. I understand most of the video but would like to see a recipe.... I know he uses simple syrup to sous vide the clemintines in... does he thicken the sauce with gelatin and xanthan gum. please post recipe or link to one.. thanks
Molecular gastronomy to me is mind boggling! I'm more traditionally trained and, therefore, I stick with the classics. Chefs that do these things are genius.
