Greta idea, Rachel! I have always canned chili with the beans and meat together, but this looks easier in the canning stage. Just so you know, i came through surgery great and am about to go home. No chemo or radiation, I am truly blessed! Thanks for your prayers and concern.
Oh my goodness! That is fantastic news! I had to have radation therapy after my surgery and it almost killed me! Lol. But- I'm still here as sassy as ever! 🤣 You just do what you're told and don't over do lol. I tend to over do(who me? I know right lol) and 3 years later I still end up sitting on the couch for a day. But as someone who's been where you are. You just enjoy every day you are here and heal. You got this!🥰🥰🥰
Rachel, you have got to get you recipe book that you were refering to printed up to sell to us. Same format, size, ring binding. Each year you could print more recipes that you have come up with through out the year that we would add to the original binder! The cookbook that grows!

Hello Rachael, you only have rehydrate dry tomatoes if you want paste, but if just want to thicken your sauces just add the dry tomatoes, they will absorb a lot of the moisture.👍🏼😉💗
I SO AGREE with you about a clean kitchen to start out the day especially during canning season!!! I know a clean kitchen makes me more motivated and enjoy the whole process so much more....and FYI; I personally like watching channels like yours that have a clean kitchen too.....it is more motivating for me too.

We have been married for 6 years now and we have never had what you would call a argument we have had grown up conversation but no arguments. She says this is what I want and I say yes mam lol. Have you ever made, canned, or eaten homemade tomato veggie soup with corn bread. OMGoodness it is sooo good and comforting. My great grand parents used to make it for us as kids. So many good memories
My mom water bath canner and so did my grandma alot of things. Am terrified of a pressure canning. Why bc I get scattered brained and get into other things afriad I would blow it up
I've never been able to grow tomatoes. Something always happens to them. My plants look great but no fruit grows. Grew 10 plants this year and all the tomatoes skins were so hard and thick. We have 95° days with 50° nights. Tomatoes do not like that. So I always end up buying a couple of boxes.
If you are getting all plant and no fruit its a fertilizer/ nutrients imbalance. Too much nitrogen incourages plant growth. I want to say(without looking at my little notebook)that tomatoes need is potassium to encourage fruiting. I'm not sure how expensive it is but maybe have your soil tested at your county extension office. Then add amendment as needed. Im lucky to have rich nice chocolate cake crumb looking soil that I just add a bit of compost to as needed. I only know about fertilizer issue because I also do hydroponics. That was a learning curve for me for sure but I will never grow cucumbers any other way lol. And for tough skins it might be the varietal you picked. Some of the newer hybrids, to me are tough skinned. My favorite canning tomatoes are Rutgers. Its an old heirloom that has great tastes and so far for me thin skins. Another is Purple Russian. Its another heirloom but it is a darker tomato with green shoulders. It makes a really rich deep colored sauce. Hope this helps.
I saved this to Watch later. I am cooking my sauces and freezing in quart size freezer bags. I just can't can now. Hoping I can add the seasonings and freeze. I have spag sauces already. Next ripe batch will be chili base. Also plan to try 1 or 2 of your green tomato solutions. Blessings!

You would be so ashamed of me right now. My kitchen is a total wreck. I’ve got a lot of things that need to be put up. I finally just put the tomatoes in the freezer last night , I’ll get to them later. The chili looks delicious 😋 I would like to start doing like you are. I made tomato powder a few days ago. I took 7.5 lbs of tomatoes, dehydrated them, and then ground them into a powder and ended up with one half pint and one quarter pint. Excited to try something new!

My husband and I both lost our sense of taste and smell from Covid, and as it has only partially come back 10 months later, we have to rely on following recipes very close. This one sounds really yummy!
Thanks to you I have ventured out in my canning and I am putting up more dump and go recipes that already have the seasonings in them. Also, thanks to you, I got me a 22 qt. roaster last week and put up a beautiful garden harvest delicious spaghetti sauce this weekend. Looks like I'll be doing a chili sauce in the near future too. :) And yes, I am looking forward to fall and cooler temps too.
I know what you mean about pressure canning, Rachel... I made a big pot of chicken stock the other day, which I was going to pressure can - but I was so tired, I just put in quart jars and stuck them in the freezer. Like you said, it's not that it's more difficult, but just more monitoring - and I didn't feel up to it! Sometimes that's just OK! 😜😍😜

Im just starting to get a bit of a tomato haul. not as prolific as last year. I plan to make sloppy joe sauce it was a win last year. and some rotel style tomatoes.

Pam says- If you are talking chili and spicey, but not hot you can try Allspice (not more than a 1/2 tablespoon in the size pot you made) and more oregano or marjoram and paprika. Anaheim peppers are also excellent. When I want to kick it, I add Ancho chili powder. There is no such thing as too hot until after you add the beans. My mom made some chili with real chili powder from Mexico that was so hot that she used it as seasoning in chili beans for over a year. She would make a pot of red beans add ground meat and about a half cup of the lava fire beans from the freezer to season the new chili. It was still way hot. But it was good chili.

My tomatoes are almost all green yet. I have about 1 dozen that I got to pick that are yellow tomatoes. That's it my peppers are just starting to get going, zucchinis and pickles are going strong but everything else is slower than last year
I grew up eating water-bath canned foods and don't have a problem with it but, I prefer to pressure can, it's quicker for me. Tomatoes are the best aren't they, so versatile! We can spaghetti sauce, pizza sauce, juice, ketchup, chili, salsa, soup.... My kitchen is full of the next batch of tomatoes from the garden to process, probably in veggie soup this round.
I just canned up the Ball spicy Asian plum sauce with skins on! Why is that ok and leaving skins on tomatoes deemed unsafe? 🤷♀️ Love watching your channel!
We absolutely agree with the clean kitchen. My hubby and I can together. As we make a batch of something one of us is cleaning up as we go. Can’t work in chaos!

Hi Rachel, just to clarify, you ripen tomatoes & throw them in the freezer u til you get enough for a full canner? What does that do to the consistency once the tomatoes thaw? This is my first time to can. Do I have to have a full canner? Whether water bath or pressure canner, do they have to be a full canner?

Rachel, I’m so happy you are making all the other pantry necessities, like the pizza sauce, barbecue sauce, etc. Last year I canned plenty of sauce and whole tomatoes, so this year I will be doing the other pantry necessities. .
Rachel I feel the same way, between making breakfast lunch and dinner on a Saturday/Sunday and keeping up with canning, a clean kitchens helps a lot for easier prep with canning
Yeah, we both have full time jobs on top of youtube / homesteading. Both work in IT. Todd does system administration and Rachel does strategic finance / regulatory / legal work now.

That is awesome if I could can spaghetti sauce without removing the skin, could I still do that after freezing tomatoes? I have a very good immersion blender, this would save me a ton of time

Okay. I have never heard anyone complain about water bath canning tomato products. That is the way I have always done it. It is in the canning books. Is it that you are adding additional vegetables? Crazy!
I think I’ll contribute to this conversation. It was not about canning tomatoes with the water bath process. It was about all the other vegetables that were added and it being bath canned. . I have learned a lot from sweet Rachel‘s answer today. Also some others suggested using a pH meter or just simply pressure canning it. ❤️

Because I am still learning, I’m not comfortable as you described. I am going to get a pH meter as suggested by one of your viewers and will pressure can when I add other vegetables. You really are an excellent teacher.
I’m really good at forgetting to put vinegar in my water too, but I’ve recently gotten into the habit of having a small dish of vinegar to wipe rims with, and then when every jar is wiped i pour the remaining vinegar into the kettle.. I also agree with the clean kitchen out of necessity. It just feels so much better waking up and starting the day with a clean kitchen. I just finished tidying up and getting the dishwasher running as I knew it would make everything much easier tomorrow. My toddler and I dropped off/picked up our 36 meat birds today, so thats my project tomorrow is cutting them up and freezing them. We are one week away from delivery of our baby boy and i will feel so much better after getting the chickens taken care of and into the freezer.. maybe ill rest the remainder of the week🤣

I'd love to raise up some meat birds but there is no processing place around me and quite frankly. I've done the processing before and I know I'm not up for it at this stage of life. We tried your chili recipe and we love it!!Ok question? We 2 that failed, but we have a few that are seal but Chili sauce dropped down a few inches and had air gap. Are those ok?
