Papaya and Avocado Salad Recipe
Ingredients: 1/2 ripe papaya, cubed. 1 avocado, cubed. 1 cucumber or half an English cucumber, sliced. 6 cherry tomatoes, halved. 1 small red onion, finely sliced. 1/2 red bell pepper, diced. 1/4 cup of olive oil. 4 tablespoons of white vinegar. Salt and black pepper to taste. Juice of 1 lemon lime. 1 teaspoon of crushed garlic. 2 scallions, finely sliced. 1 tablespoon of herb/seasoning mix. Olives. 1 jalapeño seeded and finely sliced. 1/4 cup chopped parsley. 1 handful of baby spinach. 1 teaspoon of honey or agave.
Finely slice the scallions. Seed and dice the jalapeño. Dice the bell pepper. Slice the cucumber. Peel and cube the papaya. In a large bowl, add: the peppers, onions, and some of the parsley. Squeeze the lemon lime. Sprinkle salt, black pepper and mixed herbs/seasoning. Add some of the olive oil and vinegar. Add the honey or agave, the Mamie Renée’s green seasoning, and the crushed garlic. Mix. Add the cucumber. Combine. Add the diced papaya and baby spinach. Add the avocado. Add the halved cherry tomatoes. Sprinkle with mixed herbs. Drizzle olive oil on top. Sprinkle with the remaining chopped parsley.
