Block observe and punish. Sometimes just holding back while they whiff a big move will allow you to dash and punish them. Also you can try to 6p their dolphin or threw random projectiles (carefully) to try and catch em using dolphin.

Wiff punish may and go for air to airs with the 7 framer air slash. May is a counter poke character so if you just wait for her to press buttons you can wiff punish her. Just gotta be careful of wifi s dolphin but there is a decent sized window to hit her there.
