THE BEST KETO ROLLS WITH A SECRET INGREDIENT
There are lots of keto bread roll recipes on the internet, but many of them are not very good. They are either too cheesy, eggy or grainy. Plus they are flat and dense. But, don’t fray, I have developed a recipe for the PERFECT KETO ROLL. My recipe for the best keto rolls has a secret ingredient. This ingredient will help develop that classic bread flavor and work with the leavening agents to help these rolls rise. My keto roll recipe creates fluffy, airy rolls that are the closest thing you can have to your grandma’s rolls on the holidays.
In this video, I show you how to make these easy keto rolls in less than 20 minutes. Follow along as I give step by step instructions.

KETO BREAD ROLL RECIPE
(makes 12 rolls)
3 cups shredded mozzarella cheese
4 ounces cream cheese
2 eggs
2 1/4 cups almond flour
1/4 cup coconut flour
1/4 cup buttermilk or plain low carb yogurt
1 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon salt
Preheat oven to 400 degrees. In a small glass bowl, add shredded mozzarella cheese and cream cheese. Microwave at 1 minute intervals until the cheese is melted and cream cheese has softened. If you don't want to use a microwave, melt the shredded cheese over the stovetop in a non-stick skillet and use softened cream cheese.
To a food processor, add remaining ingredients and melted cheeses. Pulse until combined. You may also combine the ingredients using an electric mixer; however, the dough comes together evenly and faster using a food processor.
Wet your hands with some water or oil in order to handle the dough. This will prevent the dough from sticking to your hands. Grad a handful of dough, form it into a ball and place on a parchment lined baking tray. Continue with remaining dough. You can form your desired size. Dough balls larger than 2.5 inches wide, will require longer cooking times. Evenly place dough balls on the tray spacing about 1 inch apart.
Bake at 400 degrees Fahrenheit for 13-18 minutes or until hardened on the outside and slightly firm on the inside. Let cool for 3-5 minutes before eating.

OH MY GOSH!!! WINNER!! I made a big pot of chicken and mushroom soup and really wished I could have some rolls with it. I found this and set myself to making a batch since I always keep these ingredients on hand. The only thing missing was plain yogurt, so I substituted our keto friendly cottage cheese. Absolutely AMAZING!! Soup with hot buttered rolls on a winter evening.... absolute perfection.

I am very close to how you were but a lil smaller but I am so sick people making comments to me like I'm huge or like you said having shorts that used to be so cute on me and now I can't even find a pair to fit me. I used to love shopping now I don't even want to go to the store and if I do I pick the biggest size don't even try it on and deal with it. I went from size 5 to size idk because I don't even want to know the real number. I hate looking at pics of myself now or me before. Thank you for your video it's time to make a change.

I was so skeptical even after reading the many positive comments so I made half of the recipe which equaled 6 rolls. I am so glad I was proved wrong. I followed the changes from some of the comments below; I used sour cream because that's what I had, omitted the eggs and added 1/2 tsp of yeast because that's all I had left. Turned out great! I was very impressed and my husband who doesn't care for any keto or gluten free or alternative recipes said he liked this - to me that is a double win. This truly did look like bread on the inside. It's a little denser than regular dinner rolls but still soft and a delight to eat. I toasted it in a skillet this morning and it toasted beautifully, spread some butter and it was delicious! A further addition to this makes it even better. Add half a tsp of instant yeast to give it a bread smell, but cover the top of each bun with sesame and nigella seeds. Out of the oven it smells beautiful.

You can make a Keto buttermilk by adding 1 Tbs of vinegar or lemon juice to coconut milk to a 1 cup line. Mix and let sit in fridge for an hour. This will also help cut down further on the carbs and works as a great substitution. 👍🏻

I'm very thankful for the work you do. I've tried (as many others have tried) possibly two dozen bread substitute recipes. Almost always there will be 100's of comments about how "life changing" the recipe was. None have been very good - to me at least. Almost always they end up a waste. That being said, this recipe is one of the best. It's just a jazzed up fathead dough with buttermilk. You will be able to eat these without tossing them. These are not a waste of time. Plus they are really fast to make. My suggested additions : Add two teaspoons of Lorann's "Buttery sweet bread dough" emulsion to the dough. It makes them even more like wheat buns. Add a teaspoon of instant yeast to the buttermilk and let it sit for 10 minutes before you start the recipe. ( this will not make anything rise but will add yeast flavor)

I am more inclined to trust this comment as we have had such similar experiences. I have attempted so many keto breads with hundreds of comments expounding on how amazing the breads were and I was always left disappointed or wanting more. I can't wait to try this bread and I pray that it turns out well.

I just made these to go along with a bone in rib eye roast...... You were 100% right they are phenomenal...... I opted to use the Greek yogurt instead of the buttermilk..... I will point out that 1 recipe I have calls for buttermilk but it specifically Said to put lemon juice in almond milk or your nut milk of choice... And let it set for 5 minutes to make your own keto version of buttermilk... I just wanted to comment about how amazing these are we are now getting ready to eat lol had to try one of those rolls.

This lady really knows what she is talking about. I am not a chocolate fanatic or a fries fanatic but I could easily devour all the bread rolls and cupcakes in a bakery in one sitting. These bread rolls and her keto cinnamon rolls R a life-saver.

So i figured out a seeded wheat like dinner roll that LITERALLY has the texture of bread. You wouldn’t even know there’s cheese in it. I used your recipe but replaced a 1/4 of the Almond Flour with Natural Almond Flour and added 2 TBS of powdered Swerve and 2 TSP of Xantham Gum. I brushed the tops with butter and did a heavy handed shake of Everything Spice. Soooo good.

I just made these and its an awesome recipe! I added 1 tsp of regular yeast for flavor, not rise as I do in all my keto breads. The smell and flavor of yeast makes it more legit!

Why not use yeast at least for taste?? JUST MADE THESE ROLLS! Excellent!! More delicious than ANY Bakery must less a store! DO TRY these even if u think u don’t need to eat keto. SO GOOD! I did use sour cream and baked for 15 min. Is there anything bad about eating a bite of “raw” dough?? Mine were very moist! I hope they weren’t raw. No eggs so figured it’s ok. Thank you very much! I needed this recipe!! It’s hard to drop bread cold turkey 😵‍💫 I also added 1 tsp of powdered chicken bouillon. It just added a little flavor that was good w/o knowing it was bouillon. These are filling. Satisfying.

They are real BREAD. No egg flavor, no gluten, no oatmeal fiber, they toast well THANK YOU THANK YOU THANK YOU. I used home made Greek yoghurt and they work great.

Made these tonight. Added Xanthum gun, spices (Italian seasoning, Oregano, Rosemary), a little more baking soda/powder and they came out bigger then my first batch (followed your recipe) and the flavor was fab! First of all thanks for the video and the time you put into it. I've never ate anything with Almond flour or keto type food. I don't know what these buns are supposed to taste like, but mine came out heavy and wow you can really taste the flour. Definitely an required taste.

I’m thinking to change out the yogurt/buttermilk for sour cream and maybe even adding yeast to to enhance the bread flavor. I know it won’t change the texture, but I do like a yeasty smelling dough.

I made these today, and took the advice to use sour cream instead of buttermilk. I also added garlic. I'm so glad to have bread on deck, but mine came out a little spongy. Just a little. I was afraid for them to get too dark on the top. They're a perfect golden brown. Maybe I needed a couple more minutes in the oven? Anyways, they're delicious!

I made these yesterday! So good! But I only had sour cream so I used that. And I baked a few and put the rest in a container in the fridge. I scooped out a few & baked just a tad longer and they were perfect also! Thanks for the recipe!!

I made these today (as buns instead of rolls). Perfect recipe! Instead of buttermilk or yogurt, I used 0.25 cup of almond milk and added a splash of ACV to make a buttermilk substitute. Also added some nutritional yeast. Thank you so much!

The rolls are ready for the oven and I’ll bake them for dinner. They smell delicious. I’m trying to back to the keto wagon. I’m still low carb but not in ketosis and my health is deteriorating. But these rolls look promising 😀

This is my first time watching your videos and I think that this is the easiest recipe for bread that I have found. I am going to try it since everybody find it really good. I am wondering if I can bake it in a loaf pan instead of rolls. Thank you for the recipe. I am planning on going into keto and I am looking for good recipes to have before I start on the diet.

My wife is allergic to nuts and the school has a no nut policy. This is out of the question. I believe pumpkin and sunflower flour should work 1:1 replacement, coconut is a 1:1/3rd replacement. Chickpea and cauliflower might be good as well.

Love them, I fattened a few and convinced myself it is an English muffin. I will add a bit of Keto sweetener next time for a sweet roll! I even screwed up by not melting the cheese first but adding all shredded cheese to ingredients (oops) I just continued in the food processor and the rolls were delicious!

@@KetoFocus I totally forgot the buttermilk (even after going to the grocery to GET it). Still these were amazing and such a game changer for me. Just sent the hubby to the store for more mozzarella to make another batch correctly!

What is the texture like? Most keto breads I tried out just won't get dry and are extremely wet in the inside. Just a no for me personally, how is this one? Read some comments to let the eggs out to get it more dry too.

The texture was medium firm fresh after I let them cool. No soggy middle. And I ate them all over three days, during which time they did not go hard and dry at all, and I stored them in pantry. Very happy with that, which is why I will be using this recipe from now on. But I will also try it without the eggs next time.

You can also add a bit of vinegar to cream and let it sit to make buttermilk

They came near to perfect, I only had cottage cheese ( that is all I had) which worked but they made the dough too wet. Round two I will go get some yogurt and I hope I am successful
