One of the main things that we wanted to do here in Tunisia is hunting for traditional and for modern foods and compare them. I do realize that Tunisia is more and more all about modern foods and snack bars but I also realize that there is hidden traditional food to be found and it is my goal to find all of them and try them all. What do you think about that? Good idea? Maybe shift my channel a bit more towards food? That way it will be a bit easier to travel and to get closer to the culture - because culture is food and that is that.

Tunisian breakfast is generally simple and sweet, such as jam or butter and bread and coffee. Lablabi is a breakfast during winter time only and is quite filling.

We also eat oily food in the morning like "ftayer" and ftayer with an egg, although this tradition is disappearing, we also eat at the "hleybi" , the dairy shop, some eat sweet sandwiches like chamia and jam and some like me with gouta and eggs.

​@@yvesthesleevenot really, western breakfasts are called "petit dej" , they started appearing in Tunisia in the mid 2000s, as for the sweets stop you ate at, it's usually a snack place for different schools students and passerby, they offer a limited selection of sweets and salty things like pate(that's what we call it) or souffle or mini thick dough pizzas, we have our own 100% Tunisian pastry, you can find those shops in the Medina selling makroud, zlebia etc... for the ones we eat at home or make for holidays or celebrations those you can only find them at upper class like patisserie(bakery) Madame hchicha or many others like gourmandises, those sweets they sell used to be only made at home by teams of women and only on demand , since like 10 years these shops started popping up, their 65 dinars box is one of the nicest gifts you can take to your loved ones, they charge 15 dinars for the box but way worth it, many Tunisians living overseas buy them as gifts, 20 US dollars for that box is cheap, all small well made pastries with different types of nuts!!! I highly recommended getting pastries in Sfax , even in other regions like Tunis Sfax people are #1 at making it.

There is more to explore in Sfax. You need to go to the old city, such as Bab El Jebli and Bab Diwen. Also, you have Souk El Hout. You should try the couscous, the jwejem, and you will find a lot of other things.

Lablabi It is commonly eaten in inexpensive restaurants. Raw or soft-cooked egg is nearly always added to the hot soup mix (thus cooking), along with olive oil, harissa, additional cumin, capers, tuna, Baklouti pepper and sometimes olives, garlic and vinegar or lemon or lime juice. Further garnishes may include cilantro (coriander), parsley and scallions. A traditional, but rarer, version, hergma, is made with cow's trotters 🎉❤

You have to understand that back in time Tunisians have to work in their farms and do all kinds of hard labor so they have to start the day eating a rich heavy breakfast to keep them going with a lot of calories to be needed during the morning until noon . Tunisian gastronomy is similar to most Mediterranean cuisine , it’s so organic , healthy , and delicious .

Hi, just for more more insight, lablabi is a street tunisian food it has two versions of it, the classic one is u know bread chickpeas and the broth, harissa, cumin, olive oil, Tuna and soft egg (never heard of lentils in it tho so maybe some people like to add new things to the recipe). And u mix mix all together and u can squeeze lemon on it. The second one is what u had is the same but instead of tuna there is Hargma which is a strong broth/sauce made from cooked sheep’s legs and stuff. Both are delicious, Hargma can be intense for some people (the tuna is more common) but they say it’s good for you. Overall you can add or remove any ingredient depends on your taste. Enjoy your stay !

Heyy, i have been follow your videos since you ve came to Tunisia, great video ! I want to tell you that there are different versions of Lablebi: the virgin one which is only chickpea soup with spices, another one with tuna, and the last one which is the strongest one is with cow feet and its the one you had which is hargma. Im glad your wife didnt notice haha. For me my favorite are virgin and tuna i can not eat hargma. You re so brave guys !

​@@yvesthesleeve oh yes it is haha i can assure you that that was not an eggplant, they cook it for a long time until it becomes so tender that you wont notice it, but it gives the lablebi that particular taste that you couldnt distinguish. Anyways, they say that it s so good for the health, so good for you ! And enjoy the rest of the trip, you have a lovely family ❤

@@wishes3444 Confirming this, yes it is a Cow feet and sometimes tail, no veggies are added to the dish, (it's the chickpeas and the broth, old not fresh bread, spices, and Harrissa, egg {Optional} .The beef legs is stewed for hours and hours, it gives a different depth to the dish. shredding the bread is part of the experience, being part of the preparation is fun. Enjoy.

If you want traditional home cook food you have to head to the medinas in any city and expect to pay way more, but the setup and the food are traditional and you'll find plates like "mloukhia", couscous with its variations, and many other plates that are not present at taditional fast food. Lablebi, kafteji, Tunisian plate and sandwich and most of those are pure fast food, those restaurants will have 1 or 2 or many plat du jour wich is more what you're looking for, sometimes they'll have a couscous or pasta or tajine(different from moroccan) or something else but very traditional need a better kitchen, higher upkeep of the place, therefore you'll pay more, many wouldn't pay 20 dinars for a couscous in one of those restaurants in the medinas, but they never think about the cost of upkeep, talented workers etc... you should absolutely venture inside the medina of Sfax, it's very well preserved and has traditional restaurants. 😊

I'm sorry to inform you that the Lablabi you ate is with "Hargma, " a broth made of beef's head and legs. The normal version has just chickpeas, bread, and Harissa. Then you can add eggs, Tuna or Hargma.

As much as I like this turkic dish of origin I really hate it in poor areas it doesn't look appetizing a bit (gosh you dear visitors stop showing these areas we re not your enemies here we re of german greek and even japanese descent and we want your advertisement like the one you do in your videos just we beg you to only show the brighter urbanized areas and if you want to show the old areas like the ones reminding us of the brutal muslim rule then show the beautiful arabic houses, the nice side of the old medinas and just pass on those dirty violent areas) . This Lablabi is not vegetarian , it is not eggplants, it is made with beef trotters , there is also Lablabi made with Tuna or you can ask them to don’t put any kind of meet. Only egg

hi there, since you are in sfax i suggest you try couscous with fish before you live the town otherwise you diffently should pay a visit to bizerte djerba korbus klibia and hawariya the south of tunisia is intresting as well but it's extremly hot now your kids may not cope with that heat there is also w town close to the algerian border named Tabarka i advice you check it out...peace.

​@@yvesthesleevehey go to Tozeur for a day, take a guide with a 4×4 to the desert, they have a nice town close to it with original people still living in there, I believe you can take a train from sfax, it's always better to rent a car(comfort)... if you take train you'll pass by mini canyons etc, if you do reach tozeur please go on a tour guide with a 4×4, do not adventure in the desert as the military is everywhere down there plus oil and gaz fields etc... a big portion of the desert is considered a military zone.

The lablabi looked appetizing, save the hargma, not my thing at all. Next logical dish to try in the fast food category would be kaftagi. There is also sohlob for breakfast. Lablabi started as a poor man meal (like pizza). The story goes that the poor turkish community in Tunis used to boil chickpeas to feed themselves and their children, cheap and filling. Then they started adding bread, cummin, harissa for better taste. Maybe one day, one will be able to order lablabi with Nutella!! I looked up the etymology of tword lablabi. Per ChatGPT, the etymology is debated, but it is likely that the word comes from turkish leblebi meaning roasted chikpeas. The arabic word for chickpeas is "homs" or "hommus" depending on the pronociation, unless the word for chickpeas in berber language is lablabi, but I am really not sure about that. Kaftagi is also a turkish name.

Plusieurs noms sont utilisés pour désigner poichiche en berbère selon les dialèctes, semble-t-il: tinkit, akesmas...mais pas lablabi. On apprend tous les jours 😀 Je me demande si les dialèctes du berbère parlés au Maghreb sont mutuellement intelligibles?

In my opinion Lablabi bowl is only good in winter... to fight against the cold. If you come to bizerte you can try our lablabi sandwichs its another story my friend :P enjoy your time.

It's not lentil, it's chickpeas in a thin garlic and cumin-flavoured broth, what looks like eggplant is "hergma" which is cow's trotters.. pretty heavy dish for a breakfast meal, kudos to you👍

This not really traditional it's traditional street food . I advice you to try the real traditional food which you find usually at houses or some restaurants like: couscous with fish or lamb like mloukhia. Like loubia.like jlbena.like tajin .like tunisian pasta...... you'll enjoy it and welcome in tunisia ❤

The meat thingie is called Hargma or Hergma, it is the meat from the head, the neck and the limbs of sheep, goats or cows. Btw, according to the world food atlas, Tunisia has the best salad in the world and it's called Mechouia Salad, ranked number one, you should try it it's one of our traditional dishes. And speaking of tunisian cuisine, it's concidered one of the best in the world if not the best (it's just underrated just like the Roman colosseum we have in the city of El Jem, which is the second biggest Roman colosseum in the world, and it's in a way far better condition than the colosseum in Italy, but it's all underrated because Tunisia is sadly a third world country). It is a mediterranean cuisine, a mixture of Italian cuisine, and north African Arab (from Morocco to the Middle East) cuisine. Enjoy.

Lablebi is a street food not a traditional food and we dont eat it in the summer mostly in the winter plus not in a brakfast cause it's spicy Glad you found it interesting though 🤣🤣

Just one thing : Tunisians are not arabs. They are north african amazighs. Arabs colonized this refion in the 7th century. Don’t believe that they are as you thought.

Hergma means the legs of the sheep ..that was not eggplant but sheep feet .lablabi is a Turkish word means cheakpeas in the oven but in Tunisia that dish is called lablabi and it has a story tat meal was the main food of the janissaries in Tunisia for centuries and then the local people like it and Tunisized and add other flavour ..They cooked for the armies and pirates for centuries because it was easy to cook and easy to transport . ( we were called the barbary coast or the pirates coasts which first begun in Afriqiya or Africa ( old Tunisia name that was later given to the whole continent) and then spread to all north africain response to the Venisian pirates who killed thousands of muslims in north africa and atatcked our shores for 2 centuries and our piracy as a reaction impressed Othmans who invest in it and Turn it to an Othman mighty armada ))....back to lablabi ..... 50 years ago lablabi was workers and peasants morning breakfast and today is a popular street food and also for those who got out of bars at night .

Where did you get this fictional story? I've never heard of it before. The problem with some Tunisians is that they make everything Tunisian have foreign origins. This dish doesn't exist in Turkey and they don't know about it, so keep your strange information to yourself. By the way, hargma is a cow's leg. You don't even know this and I doubt you're even Tunisian.
