Just discovered embroidery and your channel and I'm in love. How do you know how long the thread needs to be or is it not that important because you can just renew it any time?
Usually the needle size depends on how many strands of floss you use, so a bigger needle for six strands, and smaller the less strands you use. I usually just use the same size needle for everything besides beading which needs a very skinny needle. But if you're using a very thin delicate fabric, a thinner needle would be good.

When you think about it, the needle, the floss and the cloth all speak to each other, in terms of thickness and especially the way the needle puts a hole in the cloth, and the thread follows the needle through it. You don't want to weaken your work with too-big holes, or with too-hard tugging to get the floss through a too-small hole.
Здравствуйте! Канву обычно используют для вышивки крестом (для техники, как в видео, в канве нет необходимости), но в целом да, для одежды возможно использовать водорастворимую. Для стирки вышивки, особенно если есть объёмные элементы, рекомендуется деликатная ручная стирка.
