Broooo I just tested something for what you said about only needing salt and lime as the seasoning because the mesquite is the magic ingredient, AND MY MIND IS BLOWN! I make tacos at home literally every day. I've been trying to find a way to recreate that flavor for sooooo long using what I have available. I tried this one on a New York steak (all I had), and it actually worked! Since I have a propane grill (no mesquite...), I put a thin layer of mesquite seasoning and rubbed it in, first. Then I put another thin layer of beef seasoning from the standard Mexican market (not required, more for the citrus flavor, cumin, etc), rubbed it in, then finally I sprinkled a layer of sea salt, rubbed it in, and threw it on the grill for about 10 minutes. I used the built up smoke in the grill as the last touch to try and match the flavor. I let it sit for 5 minutes, cut a bite, and BAM the same juicy flavor when you bite into a taco in TJ! Thank you sir, your gift has changed my life forever, and will never be forgotten.. 🥺😄🌮🍻
100% on everything. Somebody mentioned this being the only video on how to make real authentic mexican T.J. Tacos and that is an accurate comment. You are right about the meats we call them chuletas with the bone the prep is correct and salsa making is accurate including your comment about the serano pepper. The seasoning of the asada itself is 100% accurate minimal in order to taste your mest and kiss it with the mesquite smoke. Even your comment about taqueros using mozzarela cheese. Truth! Most people don't know this knowledge. Its like we try so hard and look so far when its been right in front of us. Keep it simple! The best tacos your will ever experience. Mex/American born & raised in CA near SD & border we still don't have a good spot locally and not to mention not many youtube videos on how to do a real taco. I never comment your video deserves it. I loved your presentation. The history, your personal background with the dish. You definitely made me want to do this authentically. I am a chef of German food and it is very hard to get people excited about it unless you understand the background starting from when I grew up with the culture and traditions. You Rock!

Karl Byrne I listen to various things while cooking.. some of my favorite bands are rotting Christ (in which I’m doing a recipe inspired by) , type o negative, power trip , emperor, elder , paradise lost , septic flesh, tribulation, uncle acid , ghost , my dying bride, cathedral ..etc . Fun fact my name comes from my love of Doom Metal .. smoky , slow & heavy which is like classic all American BBQ itself !.

Definitely want to seed those tomatoes when making guacamole, it makes it so the tomatoes don’t release too much water into the guacamole, I’ve found they use any meat down there they can get their hands on.

Great video. I have a RU-vid channel and want to do some carne asada street tacos. After watching a ton of videos is keep it simple on the seasoning and use mesquite to cook it.
I used to go to TJ when I was in the navy.. I could get a pack of cigarettes for like 2 bucks lol and after we went clubbing late at night and it would be kind of cold outside..we would get street tacos..oh man…warm tacos… 😋
