When I think of Timemore I think of hand grinders, but they're now taking the plunge into the premium electric market with the new Sculptor series. In this video I'll be going over the 064s, which seems to bring features like adjustable RPM, 64mm flat burrs, and a metal unibody to the home coffee bar at a bargain of a price tag.

At the kickstarter price point and all the highlights you mentioned (burr swap, low retention, single dosing, multiple grind adjustments) made this a no brainer for me. It's a great time for coffee lovers as there are now many budget-friendly flat burr grinders available, such as the DF64/83 and this. This was unimaginable just a few years ago. I have been using the Lagom P64 with SSP for the past few months, and while it's a great end-game quality grinder, it's not perfect. However, if quality budget flat burr grinders become more available, they will likely lose more and more consumers to their competitors. If the 78 model offered SSP burr options, I definitely would not have purchased the Lagom P64 if I could go back in time.

Grinders of this caliber at this price point is extremely exciting! I think if I upgrade from my niche I would go the non traditional route and get a more traditional (pun intended) grinder. I’ve got my eye on the LUCCA atom 75 simply for the micrometer readout + big burrs I’m having a great time with the niche but single dosing all the time has me yearning for a 3 second OD grinder more and more. Grass is always greener!

I'm surprised no one has mentioned or complained that the RPM control is on the BACK of the grinder! Isn't that awkward? On my crowded coffee bench, I'm never going to be able to view what setting it is at! I also used the Weber Key blindly like that (which has RPM control on the side, but hard to see due to limited space beside the grinder for me) just going by sound and position of the switch and estimating, like ok Half power is about xx RPM and 1/4 turn power is xy RPM.

I bought the acaia orbit because it does everything the p64 does but for less. It's definitely not as good of a grinder and I have some complaints, but not enough to make the price difference worth it. The sculptor may just be a market breaker. It does evening you want without having to spend well over 1k. It's got endgame features for into level investment. That's massive.

I backed the big brother the 78s as it sounds like it’s notch up in both build and cup results. Important if you like me is very light roast drinkers and intend to run these at “low” RPM. I’m definitely looking forward to it. I suspect we see their v2 ending the same place as Ode v2 with a larger hopper to accommodate a more pronounced slope into the prebreaker.
@BensCoffeeRants
@BensCoffeeRants Год назад
Sprometheus says he ran this at low RPM for a light roast and had no stalling issues! Maybe Kyle's using some super light roasts or his had some issues with it, which isn't a good sign either way (quality control wise). I figured they limited the 'low' RPM to a relatively high (but OK) 800RPM to avoid stalling issues, I think it's weird the much more powerful 078 models are also limited to 800RPM I'm sure they COULD go to 600 without any issues at least.
@Zirassi
@Zirassi Год назад
@@BensCoffeeRants Different beans have different densities- even at identical roast levels, one bean can be much harder to grind than another. Thankfully, there's an easy workaround to prevent stalls- just slowly feed in the beans while the grinder is running. I grind light roast washed ethiopian (Heart most recently) espresso-fine on my Ode Gen 2, which has even less power, every time I make coffee. 0 Stalls ever. Granted it's pushing 1400 rpm all the time, but still. Timemore should have probably gone with a slower-feeding auger to mitigate this issue IMO. I Just went 078S personally.

That’s a good question, and hard for me to answer without having tried the 064 and it’s Turbo burrs. My issue with this grinder is a) that plastic used for the hopper looks a tad cheap and flimsy, compared to the rest of the device (this is coming from a Niche owner that famously has a yogurt lid) b) the motor on the 64mm version is reaaally struggling. Other reviewers pointed that out and it something to be worried about. Lastly longevity, but it's too early to say.

I hate that I keep falling into the allure of crowd funded coffee gear. The first one I ever backed was the December Dripper by Nick Cho and that largely meet it promises of being a Kalita style flat bottom cone with an aperture to play with flow rates. The second one, was some fancy aeropress device that was being made by a company that made single serve automatic machines for cafes, it looked promising and then went belly up. Next came the Ode, and while they delivered a mostly successful grinder, it still felt like a prototype, and the version 2 looks like what should of been delivered in the first place. Yet here I am wondering if I am going to burned by backing Timemore for the Sculptor 78s and Sculptor 64, at least these seem to be in production somewhat and available in China. It looks more promising. What has been bothering me though, is I feel like I am contributing to waste. I do wonder how many Ode’s are going to be discarded or stashed in a cabinet because it did not quite meet expectations. Seems like a waste of materials when if delivered a crowd funded item is really a prototype and not a fully realized design. I only feel ok with backing Timemore is because I’ve been waiting for a Logon P64 for almost a year, and there as has been no updates when I might be next with Prima Coffee. If someone at Prima reads this, please let me know if I can expect to be able to buy a P64 anytime soon, I’ll cancel my Timemore and wait for the P64. Anyway I swear this is the last crowd funded coffee gear thing I am ever going to back.

If the production units wind up matching these review units in terms of QC, then this is a no brainer. And I sincerely hope for all the backers that they do!! That said, I'm personally a bit skeptical of this marketing tactic of sending out pre-production prototypes to reviewers. It's a LOT easier to ensure quality across a few dozen "press-ready" prototype units than it is to do the same for thousands across a production batch. Maybe they'll knock it out of the park and the price of my skepticism will be the early bird discount I'm not jumping on but only time will tell.

In a lot of circumstances I’m prone to agreeing. But Timemore is a trusted brand, and I think they’ll come through. But there is always a chance.

Do you think it is likely that ssp or other manufacturers come with 78mm compatible burr sets? Also if one has the p64 with the mizen burrs, would the 78s be a good complimentary grinder for the setup? Or it would be better to have the 64s with ssp mp burrs? Thanks

From the reviews the 78s might compare similarly to a cast/mizen. I’d say the MP would give you a bigger contrast

Wow, the grinder wars are really heating up. I feel like in a few years we're going to see so much competition that a P64 will have a really difficult time making the case for $2000.

Really appreciate your in-depth content. Would you say the 064s is better than an Eureka single dose ? I can get a fully rebuilt Eureka SD with a warranty for around 390 euros and I am not sure what to get.

I'd say you will be quite happy with either of then, both seem to be great grinders, so if you need it immediately just pick the Eureka, if you don't mind waiting you can go for the Timemore.

@@yakofdez4698 I got a df64 and was mostly happy with it. The real problem is the static and the mess it makes. Coffee tastes great with stock burs. Had to take off the declumper, I changed it with one made by myself from a thin layer of plastic, but I still got the chute clogged too many times, so I just removed it and used a spacer in order to not make the screws touch the burrs. I have also aligned the burrs to be as parallel as possible in with the marker test. All the flat surfaces are touching evenly. I also 3-D printed some kind of a slow feeder. Personally, right now, I probably would have paid to get either of my past chosen grinders as they wouldn’t have been so far off the final price I paid for all of this and it would’ve been less of a headache in retrospect or in hindsight I do believe the better choice would’ve been the Sculptor 064S. The kickstart price was too good, and now I wish I had bought it and save myself all the time, money and coffee beans thrown into the garbage. I am still thinking of buying a sculptor 078s just to replace the df64 and a Eureka minion XL for a on demand grinder, Or just an XL honestly. I really dislike the dial though. The Mignon dolce vita solves that issue but has 55 mm burrs and is like at a very similar price. I also can get the XL cheaper secondhand and use my manual grinder if I wish to drink another coffee. My only problem is that space is not infinite and I am fairly pleased with the DF 64 after fixing it. Only problem now is that if I have people over I have to weight every single dose but I do want to buy small vacuum sealed containers for single doses for that reason. Overall if you have the money I would suggest the Sculptor 064S for a single dose grinder as it creates less mess and it would be more convenient to use. I have realised that the most important thing is convenience and consistency ( which in my opinion is the Niche or any Sculptor for single dosing ). . TL;DR: Got a DF64, had problems, was very frustrating, solved problems now good. Spend a little more money on grinders NOT to get better shots BUT to get a more CONSISTENT shots and a more CONVENIENT, EASIER AND LESS FRUSTRATING workflow and less mess. Sculptor looks like it checks all the marks in my opinion.

@@utiuandy99 I know sometimes we get the feeling we made the wrong call but think it this way: you already have your grinder and even if it was a bit of a pain in the ass you made it to your liking and you're already enjoying delicious cups of coffee. Those who opted for the 064S or the 078S are still waiting and we don't even know when Timemore will star shipping (there are conflicting reports, as usual 🙄). Besides, both Sculptors look very nice, granted, but we don't even know that much about them yet. With only a couple of reviews for each model I don't think we have enough information. Some reviewers consider them the best deal for your money and others just decent grinders that get the job done but prefer for instance a Eureka Mignon Specialita over the Timemore for espresso. We still have to wait a bit to see who was right and who was wrong. Or maybe all of them are right and it all depends on your personal taste. If you're happy with the espresso you get from your DF64 I'd keep it, even if it's a bit messy. No grinder is perfect, as I'm sure you already know. If you're like really fed up with dealing with its issues and can't take it anymore you can always get the 064S or S78S, keep the one you prefer and sell the other. But in any case you already have a great and very customizable grinder so you can afford to wait and see new options until you find the one you feel that it's big upgrade over what you already have for your needs. Until then just enjoy your grinder, I'd love to play a bit with a DF64 and pull a few shots. 👋

I backed the 078s. It sounds to have a more interesting flavor profile than the 064s for espresso, and that's what I am looking for. The other day I had a light roast Colombian from a Mahlkonig grinder and La Marzocco and it was wild. Very present orange and cinnamon. I feel like I should be able to achieve that with my Flair 58 + VST basket, but my Eureka Mignon Notte I think is holding me back...everyone seems to agree it makes muddy coffee (it really does lack clarity IMO), so I am REALLY hoping this grinder will help me achieve those awesome light roast drinks

Most 64mm burrs are pretty good And high clarity. Timemores 064s at least looks like a typical design. Should be a good step up from what you're used to. Especially at lower RPMs. 078s should be even better
