Tak o téhle pochoutce snad každý slyšel. Jsou různé recepty na těstíčka, ve kterých se květy máčí a potom se smaží na rozpáleném oleji.
Nedávno jsem je v těstíčku dělal na kurzu, kde ukazujeme, jak si můžeme v přírodě obstarat potravu. Dnes se podívám na rychlejší variantu bez těstíčka.
Bude to verze na „drsňáka“. Smažit budeme neobalené květy.
Bez černý je odolný keř, rostoucí podél řek, cest a okrajů lesa.
Na podzim nám dává malé plody bezinky.
Ale teď v období květu se zaměříme na květ. Ten se dá sbírat, sušit na čaj, nebo máčet a dělat z něj šťávu či víno.
Když čerstvé květy utrhnete a necháte jim trochu delší stopku, aby se za to dal květ držet, tak už máte půlku práce hotovo. Pak jen na chvilku ponoříte květ na rozpálený oheň a čekáte. Smaží se velmi ochotně a rychle. Pozor ať ho nespálíte.
Počítejte s tím, že i když ho sundáte z oleje, tak bude takzvaně docházet. Nespalte ho :)
Dělám je do zlatova a okusuju přímo z držátek, tedy stonků. Můžete je namočit do skořice nebo do skořice s cukrem, nebo lehce pokapat javorovým sirupem či medem.

Doporučuju zkusit, je to dobrota. Není to pracné a bezu je všude dost.
Pokud chcete zkusit recept s moukou a vejcem, doporučuju dělat těstíčku v igelitovém pytlíku a květy do něj jen namáčet.

I think everyone's heard of this delicacy. There are various recipes for batters in which the flowers are dipped and then fried in hot oil.
I recently made them in batter for a class where we show how we can forage for food in nature. Today I'm going to look at a quicker version without batter.
It's going to be a "badass" version. We'll fry the unwrapped flowers.
Elderberry is a hardy shrub that grows along rivers, roadsides and forest edges.
It gives us small elderberries in the autumn.
But now in bloom, we'll focus on the flower. It can be picked, dried for tea, or steeped to make juice or wine.
If you pluck the fresh flowers and leave a slightly longer stem to hold the flower, you've got half the job done. Then you just dip the flower on a hot fire for a while and wait. It fries very readily and quickly. Be careful not to burn it.
Count on the fact that even if you take it off the oil, it will run out. Don't burn it :)
I make them golden brown and I nibble them directly from the handles, i.e. the stems. You can dip them in cinnamon or cinnamon and sugar, or drizzle lightly with maple syrup or honey.

I recommend you try it, it's good. It's not labor intensive and there's plenty of elderberries everywhere.
If you want to try a recipe with flour and egg, I recommend making the batter in a plastic bag and just dipping the flowers in it.
