Tips for making cast iron dosa skillet into non-stick - No oven Cast iron seasoning tips

How to season and make cast iron pan like non stic? Or don't know how to season a dosa pan? These are my no fail tips for perfect dosa in cast iron pan. Make any dosa from crispy ghee roast to soft kallu dosa in cast iron tawa.
I find it easy to season regularly in my stove top. If you main and have a well seasoned pan, it is only 3 step process.
1. Add oil
2. Remove excess oil
3. Sprinkle water (see how hot the pan is)
Then simply pour the batter, make the desired dosa. Just need patience to wait until the dosa is ready to be removed.

I got my new Lodge tawa and followed the instructions. I was expecting that first few dosa's will stick but to my surprise, all dosas came out perfectly. Thanks for the video :)

After following your your methods I tried making dosa, but they stuck to the Amazon Basics cast-iron pan. I kept the pan unwashed with oil all over. The next day, after I heated the pain, voila! The pan behaved like non-stick ! I have one question. I used MTR instant dosa mix. As instructed I mixed the mixture, water, and sour curd in 2:2:1 ratio. Kept the mixture in room temp for 3 hours. The dosas came out well, but like pancakes, not crispy. What did I do wrong? When dosas are made normally with fermentationof rice and lentils, curd is not added. Was mixing curd result in soft pancake like dosas ?

I love that tip and will be using it on my cast iron dutch ovens which I just received, and already clean the skillet which was once my grandmother's who cooked with for decades.

wow it worked like wonder.. Thanks a lot.. my cast iron griddle was lying without use for time.. I tried many oven methods.. it didn't work.. this method was so easy and it worked like wonder..

Do we have to do the 20-min seasoning process every time we make dosa? Or is it only one time after we buy the pan ?

Right after buying. I suggest doing it often until the pan is properly seasoned

Hi, I am not sure of what kind of aluminum pan you own. If it's cast aluminum you can use this process. If not, I would treat it as stainless steel pan. Regular handwash.

Hi, thanks for the video, dosas came out great. When we wash the pan with salt and are done with seasoning. Before use, when I apply oil and wipe it, I get this brownish black residue. I have seen it in your video as well. Is it safe to use ?

I will definitely add a video for dosa batter. If rava dosa is sticking to the pan, please check two things, if the pan is evenly hot and greased well. Trying adding onions to the bottom to see if it works. Thanks for your feedback 😊

No need to do this detailed seasoning everytime. Just try to wash it clean with out debris and apply light coat of oil after pat drying

+Harini Gurusamy hi, thanks 😊 yes, it's a cloth, I used Scorth Brite reusable cloth. Paper doesn't work very well on hot surface. Other alternates are silicone brush spreader or oil spray.

Each stove top is different. I suggested heating the tawa in lowestest possible setting. Try sprinkling water to check the temperature. If not, please season again before trying.

No need to do it every time. After using each time, just make sure there is no debris. Apply light coat of oil.

Thanks for trying this. I am glad it worked out well for you. Not necessary, Just scrub the corners and use mild soap. Dont forget to heat you pan on low flame for atleast 10 mins before pouring batter

Not required u need to do it once only after that I made sure to not wash tava and use water on the hot pan and rub with onion once for every other use

Sorry, somehow this was skipped along with other questions. No need to do full fledge seasoning everytime. Make sure the pan is clean and apply a light coat of oil to prevent rusting. Hope this helps.

Some pans work without using any thing. I have another pan, that doesn't require a lot of seasoning. It's from India. A traditional iron pan for Dosa. However this one requires this elaborate process for that satisfying dosa

@@PrashainKitchen Okay. Yesterday was the first day my cook poured a multigrain batter dosa upon the well re-seasoned taw, but for reasons unknown, she couldn't get out a good one...she used the bad old 'non-stick' tawa. I hope we will be able to churn out better dosas in future.

It is all trial and error, double check the tawa heat some Dosa require more time to cook evenly.

@@PrashainKitchen Yes, yes. My wife has been 'researching' as to how to season cast iron tawas and has 'studied' other RU-vid videos. Based upon her 'research' she did some kind of seasoning with oil and onions to your tawa. Our cook has absented from work last two days and hopefully, if she turns up today for work, we might be able to eat dosas prepared on your cast iron tawa:)

Hello, I suggest if you live in India buy a cast iron pan meant for dosa. They are little heavier than roti tawa. If you like to purchase online, the tawa I used is from a brand called "Lodge" . Please check for the link in the description

Consistency is very important. Batter needs to be thin. Also unlike other dosa, rava dosa takes longer to cook. Make sure to keep the pan low heat and wait for the dosa to get crispy.

This is cast iron pan. It depends on where you live. The cheapest option to buy in India is to find a local manufacturing person. I bought this pan in US, the brand is lodge. Please look in the description section for link details

This pan is supposedly pre-seasoned. But I find it works only after proper seasoning at home

I use 3.5 idli rice and 0.5 urad dal + handful of poha and a tbsp of fenugreek seed for my idli dosa batter combo. For crispy dosa I suggest you omit poha and add extra 0.5 cup raw rice 😊

Hi Thanx for lovely tip. I was reluctant to shift to cast iron tawa after using nonstick for decades. After using Pls advise how do we maintain it till next use. In one of the cast iron brand they advise not to wash after every use.. Is that good.

Hi, if the brand recommends it do follow. But I wash it with warm water and mild soap everytime . I scrub the corners of the pan where oil gets settled. Apply oil and reheat

Is this a normal bhida tawa or a lodge cast iron tawa that you have seasoned? As lodge cast iron vessels dont need seasoning

I don't do it every. Only when I feel like the pan needs to be seasoned. Which varies based on the usage. I suggest cleaning the pan without debris and applying a light coat of oil to prevent rusting.

I bought a new pre seasoned Lodge cast iron skillet. Is it necessary to season it in the oven? Or can it be used in the way you have shown?

Hi chithra, I do it only on stove top. Keep in mind to heat only on low to med heat. I think this should do the trick.

Thanks :) and Yes, if you are washing it. It is recommended to apply oil and maintain the coating. Sometimes when I make phulka's I simply wipe, apply coconut oil.

No need to fully season it. Scrub and make sure there is no debris. Apply a light coat of oil.

Did you use induction cooktop or regular flame burner type cooktop. I use it on flame type and my dosa is always roasted more from the Centre of tawa. Any remedy?

I used to cook in electrical coil cook top. Now I have a gas cook top. Just remember to keep the tawa at low heat. I usually keep in low heat and choose wider gas burner

Amit Shrimali, same thing is happening with me. I wish someone had mentioned this about lodge tawa before I bought it. Definitely, there is problem with heat distribution on gas stove.

After first dosa how do you cool down the tawa for the second dosa batter to not stick when spreading.Since it's a cast iron heat retains so how does it cool off fast.Do you apply water and is it good for tawa.

That's the reason to maintain the low temperature throughout. If you still feel the need to reduce temperature, sprinkle water and lower the temperature even more

Definitely. For now , proportion 4 cups idli rice and 1 1/3 cup urad Dal. Also note, this proportion is because I grind in blender.
