Let's talk about an overlooked but really amazing crop: SHALLOTS!
They're SUPER easy to grow and add great flavor to your cooking, so let's dive into it.
Growing your own shallots is especially nice because you get both the clove as well as the greens, which you can use just like green onions. They can be cured just like other alliums, but they also keep in the ground nicely too.
Similar to garlic, you plant individual cloves in the ground in the fall. We like to plant around Halloween. I recommend planting along your irrigation line, and then your plants will spread all on their own so pay attention to spacing.
The harvest window is pretty flexible. You can use shallots when they're pretty small, or you can let the bulbs develop well into the summer months. I do try to harvest them all by July or August just to make room for other crops.
