She reminded us that food doesn't need to be fancy, expensive or need the use of a quazillion techniques. She cooks from the heart and to give people a brief flashback to past memories they cherish when they enjoyed tradional Korean food.

FYI, Matsogeum, which she sprinkles on kim, the seaweed, is not just salt. It’s 95% salt and 5% MSG. I guess that small amount of MSG makes significant difference.

대부분의 김은 맛소금을 사용하는데 맛있다는건 시중에 판매하는 김과는 다르다는 말

But every roasted seaweed sold in the market uses MSG too. I think the difference is in the oil and the roasting way

I wanted to point out what is lost in translation. The subtitle says salt for Matsogeum. You wouldn’t get enough umami with regular salt instead of Matsogeum even if you follow her recipe.

341, Nohae-ro, Dobong-gu, Seoul, South Korea This is the address of her restaurant. The name of the restaurant is jul-geo-un sul-sang. It's very popular, so I think it's hard to get in without a reservation. Good luck.

Sigle side If you apply them one by one and build up layers, the oil will penetrate evenly over time.

This is toasting, not roasting. There is a big difference.
@Wandrative
@Wandrative 2 дня назад
In Korean there is no word difference. Its all 'Gupp'da'(굽다). Toasting, roasting, grilling, and baking are all the same word, gupp'da. Koreans don't differentiate them in the language -- just like in English people don't differentiate three cooking methods that Koreans will differentiate: 'Bokk'da' (볶다), 'Twiigi'da' (튀기다), Butchi'da (부치다); which in English is all described as 'Frying'. Twigim is something like frying food submerged in a lot of oil, Bokkeum would be frying a mixture of many food particles in little oil which requires constant stirring, and Butchim would be frying a big piece solid food material on oil that requires the flipping of the food to get on both sides.
@sinisterbystander4725
@sinisterbystander4725 2 дня назад
Just a slight mistake of translation, because words from different languages usually cannot be replaced one to one. She used a generic word 굽다 in Korean, which means both.
@unina75
@unina75 2 дня назад
@@WandrativeI am also Korean who is lived in U.S. but, I can find some words switch to 튀기다 in English. Deep frying(완전 튀김 ) Pan frying(부치다 alike), and sautéed (볶다 from French maybe) Korean traditional cuisine does not using oven, so not that much word & concept , so the language reflects the idea. The 굽다 maybe from roasting switched to pan frying I guess. From Korean azumma
@Wandrative
@Wandrative День назад
@@unina75 What can be highlighted is that you are talking about adding another descriptive qualifier in front of the already existing word ‘frying’. The same can be applied for ‘Guppda’ as well. Sautéing is indeed a different word, but its a different cooking method from Bokkem as it requires food to be heavily drenched in oil and sauce.
