Ingredients : 1.5kg Potatoes
2 Bell Peppers
2 Onions
Fresh Dill
Fresh Parsley
700g Pork Sausages
150g Tomato Passata
1tbsp Tomato Paste
100ml Sunflower Oil
1tsp Dried Thyme
3-4 Bay Leaves
1tbsp Knorr Seasoning
Salt
Black Pepper

Start buy cutting the sausages into big chunks, chop up the onions and peppers into cubes , cut the potatoes in big chunks, and fry the sausages for 2-3 minutes on each side. Then take them out into a bowl, and add the onion and peppers into the same pan using the remaining oil. Add a pinch of salt and saute for 3-4 minutes on medium heat.
Add in the tomato paste, tomato passata, bay leaves, dried thyme and the potato chunks . Pour in enough water to cover the potatoes , put a lid on and let everything boil for 25-30 minutes on medium heat. Stir every now and then .
In the meantime , chop up the dill and parsley. Check on the stew and if the water level has dropped, you can add in another 200ml. Check the potatoes are cooked using a fork , and once they' are almost done , add in the fried sausages.
Add more salt and pepper if needed ( always add based on your taste preference ) and let the stew cook for a further 2-3 minutes, then add in the dill and parsley.
Turn the head off , put the lid back on and let the herbs infuse the food for 5 minutes , then serve . Enjoy !
