Welcome to the herd. This is Susan and I want to thank you for joining us on our journey. Like many of you, we are working to retire debt as we are beginning the process to retire ourselves. To say we got a late start on this adventure is an understatement. Stick around and see what we have in the works from downsizing, putting our home on the market and moving full time into our RV.
Today is hubby's Chemo Day so I'll be using the crockpot to have our supper almost done while we are gone. I gave him a couple choices and he chose Sweet Barbeque Meatballs with Rice. We'll see if he likes it or not since his taste has been completely "off" with chemo.
Basically I used
1/2 of a 2 lb bag of meatballs
1/2 a jar of peach jam (I couldn't find apricot)
1/2 a bottle of plain BBQ sauce
Put the meatballs in a lined crockpot. Put the jam and BBQ sauce on top. Don't worry about mixing it up...just dump it all in.
Cook on Low for 6-8 hours. Serve over rice. Garnish with scallions, sesame seeds and chopped peanuts (totally optional)
I served mine over 1/2 C cottage cheese to up the protein.
