Kraut is great gut medicine, like most fermented foods. Kraut and kimchi, best uses of cabbage in my mind. Sorry I missed the RU-vid live streams last night.
Haven't read your book but i started as a prepper, then ended up a homesteader and now have spent the last 6 years living on acreage. Can our food and have butchered everything raised on it. I am however event driven in some area as i still work supervising a machine shop and the economy dictates the ebbs and flows. I don't know corona virus but i do know its disruptive. So far buisness is still good but new orders are falling off. Shutting down the economy is shtf in its self.
Since it is critical as a "need" item, and valuable as a barter item, I would govern it by how much space you have. Salt is cheap and it's value is incalculable if a grid down situation lasts long enough. A single "salt box" for salting meat from a single large animal could take 20-30 lbs of salt.
